Description

This savory mackerel omelet is a great start to the day! The combination of smoked mackerel, fresh tomatoes, and spicy pearl onions makes it a taste experience. I like to make it when I want to prepare something special for breakfast or brunch. It is quick to make and tastes simply delicious. Perfect for those who prefer it hearty in the morning. Due to the high protein content, it keeps you full for a long time and gives you energy for the whole day.

Ingredients (9 ingredients)

  • 500 g Mackerel(s) smoked, cut into bite-sized pieces
  • 4 piece small Tomato(es) quartered, pitted
  • 2 tbsp Pearl onion(s) small, drained
  • to taste Salt
  • to taste Pepper black from the mill
  • to taste Worcestershire sauce
  • 8 piece Egg(s)
  • 8 tbsp Water
  • 2 tbsp Herbs chopped, possibly frozen

Preparation (5 steps)

Prepare mackerel mixture

Put the mackerel pieces, tomato quarters and pearl onions in a bowl. Season with salt, pepper and Worcestershire sauce and mix carefully. No Thermomix setting required.

Whisk eggs

Add salt and chopped herbs and stir in for 5 sec./speed 2.

Bake 4 omelets one after the other in a pan with hot fat. No Thermomix setting required.

Fill and serve omelets

Divide the omelets on plates and cover one half with a quarter of the fish mixture and fold the other half over it. Serve immediately. No Thermomix setting required.
