Description

This savory pie with zucchini flowers is an explosion of spring flavors! The crispy puff pastry base encloses a creamy and fragrant filling, enriched by the delicacy of fresh zucchini flowers and basil. The preparation is really simple and quick, perfect for a light lunch, a delicious appetizer or an informal dinner with friends. I often prepare it during the zucchini flower season, because it is a delicious way to enjoy this special ingredient. A vegetarian dish that will win over everyone, even the most skeptical!

Ingredients (10 ingredients)

  • 1 pack Puff pastry
  • 2 piece Eggs
  • 80 g Parmigiano Reggiano
  • 20 piece Zucchini flowers
  • 200 ml Fresh cream
  • 5 foglie Basil
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 1 piece Egg
  • 2 cucchiai Whole milk

Preparation (10 steps)

Cream preparation

In the bowl, pour 200 ml of fresh cream, 80 g of grated Parmigiano Reggiano and 2 eggs. Mix for 20 Sec./Stufe 4 until you obtain a homogeneous cream.

Add a pinch of salt and black pepper to the cream in the bowl. Mix for 10 Sec./Stufe 3 to mix the ingredients well.

Cleaning the zucchini flowers

Gently clean 20 zucchini flowers, removing the central pistil. Set aside the petals.

Base preparation

Unroll 1 package of puff pastry and use it to line a 26 cm diameter mold. Prick the bottom of the pastry with the tines of a fork.

Distribution of zucchini flowers and basil

Distribute half of the zucchini flowers on the bottom of the pastry. Add 5 basil leaves, chopped by hand.

Pouring the filling

Pour the filling prepared in the bowl onto the puff pastry base and level it evenly over the entire surface of the pie.

Decoration with zucchini flowers

Add the remaining zucchini flowers on the surface, arranging them in a harmonious and uniform way.

Finishing the puff pastry

Fold any excess puff pastry towards the inside of the savory pie, cut the excess parchment paper with scissors.

Preparation of the browning

In a bowl, beat 1 egg with 2 tablespoons of whole milk.

Browning and cooking

Brush the edges of the savory pie with the beaten egg and bake in a static oven at 200°C for 25 minutes.
