Description

These pork ribs are an absolute treat! I always make them when we have guests or when it's supposed to be something special. The marinade with ginger, honey and soy sauce gives the meat an incredibly delicious, slightly sweet note. The long marinating and subsequent cooking in the oven makes the ribs very tender and almost fall off the bone. Finally, the honey glaze provides a beautiful crust. Perfect for barbecues or as a hearty main course. The preparation takes some time, but the result is worth it!

Ingredients (9 ingredients)

  • 2 cm Ginger
  • 2 piece Onions
  • 2 clove Garlic
  • 150 g Tomato ketchup
  • 100 g Honey
  • 100 ml Soy sauce
  • 100 ml Apple vinegar
  • 2 tbsp Worcestershire sauce
  • 2 kg Pork ribs

Preparation (6 steps)

Chop onions, garlic and ginger

Thermomix® Setting

Put 2 onions and 2 cloves of garlic in the mixing bowl and chop for 3 sec./speed 5. Add 2 cm of ginger and chop for another 3 sec./speed 5. Use the spatula to push everything down from the edge.

Prepare marinade

Thermomix® Setting
10 sec/Speed 3

Add 150 g tomato ketchup, 100 g honey, 100 ml soy sauce, 100 ml apple vinegar and 2 tbsp Worcestershire sauce to the chopped ingredients in the mixing bowl and stir for 10 sec./speed 3.

Marinate ribs

Divide 2 kg of pork ribs into portion-sized pieces. Put in a bag with the marinade, seal well and marinate in the refrigerator overnight (at least 12 hours).

Reduce marinade

Thermomix® Setting
10 min/Varoma/Speed 2 Varoma

Pour the marinade from the bag into the mixing bowl and cook for 10 min./Varoma/speed 2 without the measuring cup. Use the spatula to scrape down from the edge.

Cook ribs

Preheat oven to 150 °C top/bottom heat. Drain spare ribs. Place spare ribs with the bones facing up on a baking sheet lined with aluminum foil, cover well with foil, seal and cook for 90 minutes.

Glaze and fry ribs

After 90 minutes, brush the spare ribs with the thickened marinade, place on the grill or bake in the oven under the grill function for 10-15 minutes until crispy.
