Description

This black spaghetti with seafood dish is an explosion of Mediterranean flavour with a spicy touch. The pasta, dyed with squid ink, combines perfectly with king prawns, mussels, clams and a garlic cherry tomato sauce. Ideal for a quick but sophisticated dinner, this dish is perfect for seafood lovers and intense flavours. I usually prepare it when I want to treat myself without spending hours in the kitchen. A dish that always triumphs!

  • 175 gr black spaghetti
  • 4 piece king prawns
  • cherry tomatoes
  • 0.5 bolsa frozen seafood (mussels, clams, small prawns)
  • 1 piece cayenne pepper
  • chopped parsley
  • white wine
  • evoo
  • salt

Preparation of the ingredients

Peel the king prawns and reserve the heads. Cut the cherry tomatoes in half. Defrost the mixed seafood (mussels, clams, small prawns). Boil the spaghetti in a separate saucepan according to the package instructions and reserve.

Sauce of the king prawn heads and cayenne pepper

Thermomix® Setting

Add extra virgin olive oil to the bowl. Add the king prawn heads and the cayenne pepper. Program 5 Min./120°C/Speed 1. Crush the heads with the spatula so that they release all the juice. Remove the heads and cayenne pepper from the bowl and reserve the flavored oil.

Cherry tomato sauce

Thermomix® Setting
5 min/212°F/Velocidad 1 100

Add the cherry tomatoes to the bowl with the flavored oil. Add a little of the spaghetti cooking water. Program 5 Min./100°C/Speed 1. Cover the bowl and wait for the tomatoes to soften. Add a splash of white wine and program 1 Min./100°C/Speed 1 without the measuring cup so that the alcohol evaporates.

Incorporation of the seafood

Thermomix® Setting
2 min/212°F/Velocidad 1 100

Remove the cayenne pepper. Add the small pieces of squid from the seafood bag to the bowl. Program 2 Min./100°C/Speed 1. Add the chopped parsley and stir with the spatula. Add the rest of the seafood (except the clams and the peeled king prawns).

Cover the bowl and program 3 Min./100°C/Speed 1. Add the clams and program 2 Min./100°C/Speed 1. Stir with the spatula so that it does not burn.

Mixing the spaghetti with the seafood

Thermomix® Setting
1 min/194°F/Velocidad 1/Giro a la izquierda 90 Reverse

Add the drained spaghetti to the bowl and stir with the spatula to mix well. Program 1 Min./90°C/Speed 1/Reverse rotation to integrate the flavors.
