Description

Prepare a hearty pork tenderloin, Italian style, with the Thermomix®. This main course with pork tenderloin, olive oil, sage, ham and chicken liver is ideal for lovers of Mediterranean cuisine. In just 35 minutes, you can create portions for a festive or hearty lunch or dinner. This recipe is especially suitable for anyone who loves savory meat dishes.

Ingredients (15 ingredients)

  • 750 g Pork tenderloin, sliced
  • 4 TL Olive oil
  • 2 Stück Garlic cloves, pressed
  • 10 Stück Sage leaves, chopped
  • 50 g Raw ham, diced
  • 150 g Chicken liver, diced
  • 3 Stück Anchovy fillets, finely chopped
  • 60 g Capers
  • 1 Stück Lemon
  • 1 TL Grated zest
  • 0.5 Stück Juice of lemon
  • 5 EL Dry white wine
  • 0.5 Bund Parsley, chopped
  • Lemon slices
  • Basmati rice

Preparation (8 steps)

Chop garlic

Place the garlic cloves in the mixing bowl and chop for 3 sec./speed 7. Scrape down the sides with the spatula.

Prepare sage, ham and chicken liver

Chop sage leaves, dice raw ham and chicken liver.

Sear meat

Salt and pepper the pork tenderloin slices. Heat oil in a separate pan and sear the slices on both sides. Remove from the pan and set aside.

Sauté aromatics

Add olive oil to the mixing bowl, add garlic, sage leaves, ham and chicken liver and sauté for 3 min./120°C/speed 1.

Add other ingredients

Add anchovy fillets, capers, lemon zest and lemon juice and simmer for 1 min./100°C/speed 1.

Add and braise fillet pieces

Add the seared fillet pieces to the mixing bowl and braise for 7 min./100°C/Reverse speed 1.

Deglaze with white wine

Pour in white wine and bring to a boil for 1 min./100°C/speed 1.

Arrange on a plate, sprinkle with chopped parsley and garnish with lemon slices. Serve with basmati rice.
