Description

This recipe for saddle of wild boar with juniper cream sauce is a hearty main course, ideal for the autumn season. It is prepared with the Thermomix®, which makes the sauce particularly aromatic. The saddle of wild boar is seared separately and then served with the creamy sauce. The dish is designed for 4 servings and is well suited for festive occasions.

  • 250 g Onions
  • 100 g Celery
  • 40 g Clarified butter
  • 20 g Tomato paste
  • 200 ml Red wine
  • 200 ml Game stock
  • 1 Stück Bay leaf
  • 5 Stück Juniper berries
  • 5 Stück Peppercorns
  • 1 Stück Sprig of rosemary
  • 1 Stück Sprig of thyme
  • 100 ml Cream
  • 20 g Butter
  • Salt
  • Pepper
  • Saddle of wild boar

Preparation (9 steps)

Chop the onions and celery

Place 250g onions and 100g celery, roughly chopped, in the mixing bowl and chop for 3 sec./speed 5.

Sauté the vegetables

Add 40g clarified butter to the chopped onions and celery in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add and roast the tomato paste

Thermomix® Setting
2 min/248°F/Speed 1 248°F

Add 20g tomato paste and roast for another 2 min./120°C/speed 1 without the measuring cup.

Deglaze with red wine and reduce

Thermomix® Setting

Add 200ml red wine and 100ml game stock to the mixing bowl and let it reduce for 5 min./100°C/speed 1 without the measuring cup.

Add the remaining ingredients and simmer

45 min/203°F/Speed 1 203°F

Add 1 bay leaf, 5 juniper berries, 5 peppercorns, 1 sprig of rosemary, 1 sprig of thyme and 100ml game stock and simmer for 45 min./95°C/speed 1 with the measuring cup.

Strain the sauce

Pass the sauce through a fine sieve and return to the mixing bowl. Remove bay leaf, juniper berries, peppercorns, rosemary sprig and thyme sprig.

Finish the sauce

Add 100ml cream and 20g ice-cold butter in pieces and stir for 5 min./80°C/speed 2. Season with salt and pepper.

Sear the saddle of wild boar on all sides in a separate pan with a little oil.

Carve and serve the saddle of wild boar

Carve the saddle of wild boar and serve with the juniper cream sauce.
