Description

This semolina-curd casserole with fresh fruits from the Thermomix® is a delicious dessert or a filling breakfast. The main ingredients are curd, semolina, eggs and seasonal fruit. With a preparation time of 45 minutes, of which 20 minutes are active, the recipe yields 6 servings. Ideal for light cuisine in summer and spring or as a family meal. The recipe is vegetarian.

  • 200 g fresh Fruit as desired and Season
  • 500 g Cream Curd (40%)
  • 70 g Sugar
  • 75 g Soft Wheat Semolina
  • 2 packet Bourbon Vanilla Sugar
  • 1 Spritzer Lemon Juice
  • 1 pinch Salt
  • Butter for the mold

Preparation (8 steps)

Preheat oven and prepare casserole dish

Preheat the oven to 180°C top/bottom heat (160°C convection oven). Grease a casserole dish with a diameter of approx. 26 cm or approx. 32 x 25 cm with butter.

Separate eggs and beat egg white until stiff

Separate 4 eggs size L. Put the egg white with 1 pinch of salt into the mixing bowl and beat stiff with the butterfly 3 min./speed 3.5. Transfer the egg white and refrigerate.

Beat egg yolks until frothy

Put the 4 egg yolks, 70 g sugar and 2 packets Bourbon vanilla sugar into the mixing bowl and beat until frothy for 2 min./speed 3.

Prepare curd mixture

Thermomix® Setting

Add 500 g cream curd (40%), 75 g soft wheat semolina and 1 splash of lemon juice to the egg yolk-sugar mixture in the mixing bowl and stir for 30 sec./speed 3.

Fold in fruit

Carefully fold 200 g fresh fruit (or frozen fruit, fruit from a jar or can, well drained) into the curd mixture in the mixing bowl with a spatula. If using frozen fruit, use it unthawed.

Fold in egg white

Carefully fold the egg white into the curd mixture in the mixing bowl with a spatula. Do not stir too much so that the egg white remains stable.

Bake casserole

Spread the curd mixture evenly in the casserole dish, garnish with pieces of fruit as desired and optionally sprinkle a handful of flaked almonds on top. Bake the casserole for approx. 30-35 minutes on the second rack from the bottom. Cover if necessary if it gets too dark.

Let the casserole cool and serve

Let the casserole rest and cool for about 5 minutes before serving. Serve with a fruit, vanilla or chocolate sauce as desired.

This semolina-curd casserole is a wonderful memory of my childhood for me. My grandma often baked it, especially in the summer when the garden was full of fresh berries. She always said that it was a simple but honest dish that made the whole family happy. And she was right! The ingredients all play an important role. The curd, preferably a cream curd with 40% fat, provides the creamy base and the slightly sour taste. The semolina gives the casserole structure and binding, it absorbs the liquid and ensures a pleasant consistency. The eggs, of course from happy chickens, bring airiness and a beautiful golden color. The sugar sweetens the whole thing, but not too obtrusively, so that the flavors of the fruit are in the foreground. And the fruits themselves are the icing on the cake! They bring freshness, acidity and a natural sweetness that harmonizes perfectly with the curd. A splash of lemon juice enhances the flavors and prevents the casserole from becoming too heavy. When preparing in the Thermomix®, it is important to follow the order of the steps exactly. The stiffly beaten egg white ensures a particularly loose texture. Make sure that the mixing bowl is clean and free of grease before adding the egg white. The butterfly whisk is essential here. Patience is required when folding in the egg whites. Carefully fold it into the curd mixture with a spatula so that the air does not escape. Avoid stirring too much. The baking time may vary depending on the oven. Observe the casserole carefully and cover it with aluminum foil if it gets too dark. The recipe is already suitable for a vegetarian version. If you want to prepare it vegan, you can replace the curd with a plant-based alternative based on soy or cashew. The eggs can be replaced with applesauce or flaxseed eggs. Instead of Bourbon vanilla sugar, you can also use the pulp of a vanilla pod or experiment with some lemon or orange zest. A pinch of cinnamon or cardamom also goes perfectly. Serve the casserole warm or cold, depending on your taste. It tastes delicious on its own, but with a scoop of vanilla ice cream, a dollop of cream or a homemade fruit sauce it becomes a special treat. A few roasted almonds or hazelnuts also go well with it. The casserole can be stored in the refrigerator for about 2-3 days. It can also be prepared well in advance. The curd mixture can be prepared the day before and stored in the refrigerator. However, you should only beat the egg whites and fold them in shortly before baking. This keeps the casserole nice and airy.
