Description

This savory layered dish is an absolute delight! Tender cutlets, fresh spinach, aromatic mushrooms and a spicy tomato sauce are layered to create a delicious casserole. The long braising time in the oven perfectly combines the flavors and makes the cutlets particularly tender. An ideal dish for a cozy family meal or a special occasion. The preparation takes a little time, but it's definitely worth the effort! If you like, you can sprinkle some fresh parsley on top.

Ingredients (18 ingredients)

  • 2 piece medium sized Onions
  • 2 clove Garlic cloves
  • 4 tbsp Olive oil
  • 1 tbsp slightly heaped Flour
  • 50 g Flour
  • 850 ml Tomatoes (can)
  • 2 tbsp Tomato paste
  • to taste Salt
  • to taste Pepper
  • 0.5 tsp dried Thyme
  • 0.5 tsp dried Oregano
  • 750 g Spinach
  • to taste grated Nutmeg
  • 500 g Mushrooms
  • 6 piece thin Pork cutlets (à approx. 125 g)
  • 125 g Mozzarella Cheese
  • 75 g grated medium-aged Gouda cheese
  • Parsley

Preparation (10 steps)

Prepare onions and garlic

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 7

Peel 2 medium-sized onions, halve and place in the mixing bowl. Chop for 3 seconds/speed 5. Remove half of the chopped onions and set aside. Peel 2 garlic cloves and add to the remaining onions in the mixing bowl. Chop for 3 seconds/speed 7.

Sauté onions and garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp olive oil to the onions and garlic in the mixing bowl and sauté for 3 minutes/120°C/speed 1.

Prepare tomato sauce

Thermomix® Setting
15 min/212°F/Speed 1 100

Add 1 slightly heaped tbsp flour and sauté for 1 minute/100°C/speed 2. Add 1 can (850 ml) tomatoes, 2 tbsp tomato paste, salt, pepper, ½ tsp each of dried thyme and oregano and simmer for 15 minutes/100°C/speed 1. In between, push down from the edge with the spatula.

Season tomato sauce

Season the tomato sauce with salt and pepper and set aside.

Prepare spinach

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Clean, wash and drain 750 g spinach. Place half of the reserved onions in the mixing bowl, add 1 tbsp olive oil and sauté for 3 minutes/120°C/speed 1. Add spinach and steam for 5 minutes/100°C/reverse rotation speed 1. Season with salt, pepper and grated nutmeg. Drain spinach on a sieve if necessary.

Prepare mushrooms

Clean 500 g mushrooms and cut into slices. Sauté the remaining onions in a large pan with 2 tbsp olive oil. Add mushrooms and fry until golden brown, turning occasionally. Season with salt and pepper.

Layer layered dish

Grease a casserole dish and pour 1/3 of the tomato sauce into the dish. Place 50 g flour on a plate and turn the 6 thin pork cutlets (à approx. 125 g) in it. Place 3 cutlets slightly overlapping on the sauce and season with pepper. Distribute 2/3 of the spinach and half of the mushrooms on top and cover with the remaining 3 cutlets, season with pepper. Spread the remaining spinach and mushrooms on top and cover with the remaining tomato sauce.

Braise layered dish

Cover the casserole dish well with aluminum foil and braise in the preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) for 2-2 1/2 hours.

Add cheese and finish braising

Drain the mozzarella and cut into slices. Place on the tomato sauce 30-40 minutes before the end of the cooking time and sprinkle with 75 g grated medium-aged Gouda cheese. Finish braising until the layered dish has a crispy cheese crust.

Garnish and serve

Garnish the finished layered dish with parsley and serve.
