Description

This potato ground meat casserole is a hearty and filling dish that is perfect for the whole family. The combination of potatoes, ground meat, zucchini and cheese makes it a real comfort food. I especially like to make it in the autumn, when it gets colder outside. The preparation is uncomplicated and the Thermomix® helps to process the ingredients quickly and easily. An absolute favorite recipe that is always well received! It can be easily varied with other vegetables such as peppers or eggplant.

Ingredients (11 ingredients)

  • 1 kg Potatoes
  • 1 piece Zucchini
  • 2 piece Onions
  • 1 tbsp Sunflower oil
  • 500 g Ground meat
  • 2 tbsp Tomato paste
  • 1 pinch Sugar
  • 125 ml Water
  • 4 tsp Broth powder Rusticale
  • 200 g Gouda grated
  • 100 ml Sweet cream

Preparation (6 steps)

Prepare potatoes

Wash the potatoes and cook them in a pot in their skins for about 20 minutes. Then peel and cut into slices. Clean the zucchini, wash and also cut into slices. Peel the onions and cut into cubes.

Chop onions

Put the diced onions into the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Prepare ground meat

Heat the oil in a pan and brown the ground meat in it until crumbly. Add the chopped onions and sauté for 2 minutes. Add tomato paste, sugar, water and 3 tsp broth and cook for about 5 minutes until the liquid has evaporated.

Fill casserole dish

Grease a casserole dish with oil and line with half of the potato and zucchini slices. Spread the ground meat mixture on top and sprinkle with half of the grated Gouda. Distribute the remaining potato and zucchini slices on top, like roof tiles.

Prepare cream sauce

Put the cream and 1 tsp broth into the mixing bowl and heat for 3 min./90°C/speed 2 until the broth has dissolved.

Finish and bake casserole

Pour the sauce over the casserole and sprinkle with the remaining grated Gouda. Bake in the preheated oven for about 30 minutes.

This potato ground meat casserole is more than just a recipe for me; it is a reminder of cozy family meals in my childhood. My grandma always made it on Sundays, and the scent that wafted through the house was simply indescribable. I have adapted her recipe slightly over the years, but the basic idea – a hearty, filling dish for the whole family – has remained. The main protagonists of this casserole are, of course, the potatoes and the ground meat. The potatoes, preferably a firm-cooking variety, provide the necessary base and a pleasant texture. They are pre-cooked so that they don't take too long in the oven and become nice and soft. The ground meat, ideally mixed, brings the hearty taste and the necessary spice into play. The zucchini, which I like to add, contributes a slight sweetness and a juicy consistency that harmonizes perfectly with the other ingredients. The Gouda, which is sprinkled over the casserole, melts in the oven to a golden brown crust and provides the irresistible cheese taste. The Thermomix® is a great help with this recipe, especially when chopping the onions. This is done in a flash and without tears! Make sure not to chop the onions too finely, they should still have some bite. When browning the ground meat, it is important that it becomes crumbly so that it is well distributed in the casserole. The tomato paste gives the ground meat a nice color and a slightly sour taste, which is balanced by a pinch of sugar. The broth provides the necessary spice and liquid so that the ground meat does not become too dry. The cream sauce, which is quickly prepared in the Thermomix®, makes the casserole particularly creamy and juicy. For a vegetarian version, you can simply replace the ground meat with a plant-based alternative or add more vegetables such as peppers, eggplant or mushrooms. You can also vary the spices: garlic, paprika, oregano or rosemary go perfectly with this dish. For a vegan version, you can use plant-based cream and cheese. Serve the potato ground meat casserole with a fresh salad. A green salad with a light vinegar-oil dressing or a tomato salad are a perfect match. A dollop of sour cream or yogurt also tastes very good. The casserole can be prepared well in advance. You can prepare it the day before and then store it in the refrigerator. Before baking, you should let it stand at room temperature for about 30 minutes. Leftovers can be stored in the refrigerator and reheated the next day. It tastes almost even better when it has steeped!
