Description

This Sicilian spaghetti dish is a real ray of sunshine on a plate! I love preparing this simple and tasty recipe, perfect for a quick weeknight dinner or a sunny lunch. Ripe tomatoes, fresh basil and garlic delicately flavor the pasta, while almond powder and parmesan add a touch of indulgence and texture. It is a vegetarian dish that will please the whole family, and it is ready in less than 30 minutes! Feel free to add a pinch of chili to enhance the taste if you like more pronounced flavors. A real treat!

Ingredients (9 ingredients)

  • 2 tbsp almond powder
  • 1 bunch basil
  • parmesan
  • olive oil
  • salt
  • pepper
  • 6 piece ripe tomatoes
  • 2 clove garlic
  • spaghettis

Preparation (6 steps)

Preparation of the tomato sauce

Put the 6 ripe tomatoes, the bunch of basil and the 2 cloves of garlic in the Thermomix bowl. Salt and pepper. Mix 10 Sec./Stufe 5, until a slightly mashed texture is obtained.

Addition of oil and seasoning

Add generously olive oil in the Thermomix bowl. Taste and adjust seasoning if necessary. Mix 5 Sec./Stufe 3 to mix well.

Incorporation of almonds and parmesan

Thermomix® Setting
5 sec/Linkslauf Speed 2 Reverse

Add the 2 tbsp of almond powder and 2 to 3 tbsp of grated parmesan in the Thermomix bowl. Mix gently 5 Sec./Linkslauf Stufe 2.

Cooking the spaghettis

Meanwhile, cook the spaghetti 'al dente' according to the instructions on the packaging. Use a saucepan with boiling salted water.

Mixing and serving

Thermomix® Setting
10 sec/Linkslauf Speed 2 Reverse

Drain the spaghettis and add them to the Thermomix bowl with the sauce. Mix gently 10 Sec./Linkslauf Stufe 2 to coat the pasta well with sauce.

Serving

Serve the spaghettis in plates and sprinkle with lots of grated parmesan.
