Description

This oven spinach frittata is a simple and tasty dish, perfect for a quick dinner or a Sunday brunch. Fresh spinach, eggs, grated cheese and a touch of milk come together to create a soft and flavorful frittata. The preparation is really quick thanks to the Thermomix®, which helps us cook the spinach evenly and mix the ingredients to perfection.   • 500 g Spinach
  • 6 piece Eggs
  • 1 pinch Salt
  • 50 ml Milk
  • 50 g Parmigiano Reggiano
  • 30 g Breadcrumbs

Cooking the spinach

Thermomix® Setting
5 min/212°F/Speed 1 100

Insert the washed spinach into the bowl. Cook for 5 Min./100°C/Speed 1. Make sure the spinach has reduced in volume and the excess water has evaporated. If necessary, prolong the cooking for a few minutes.

Cutting the spinach

Transfer the cooked spinach to a cutting board and cut it coarsely with a knife. Let it cool for a few minutes.

Preparation of the mixture

In the clean bowl, insert the eggs, salt, milk, grated cheese and breadcrumbs. Mix for 20 Sec./Speed 4.

Addition of spinach

Thermomix® Setting
10 Sec./Linkslauf/Speed 2 Reverse

Add the cut spinach to the mixture in the bowl. Mix gently for 10 Sec./Reverse/Speed 2 to blend the ingredients.

Oven cooking

Transfer the mixture to a baking dish of about 25x15 cm. Bake in a hot oven at 190°C for about 20 minutes, or until the frittata is golden and firm.

Portioning and serving

Once cooked, remove the frittata from the oven and portion it with a knife. Serve hot or warm.
