Description

This slow-cooked beef curry is a flavorful and comforting dish, perfect for a chilly evening. I've been making this recipe for years, and it's always a hit with my family and friends. It's ideal for meal prepping, as the flavors deepen even more overnight. Serve it with rice or naan bread for a complete and satisfying meal. Feel free to adjust the amount of chili powder to your liking – I like mine with a bit of a kick!

Ingredients (18 ingredients)

  • 100 ml vegetable oil
  • 4 piece cardamom pods
  • 3 piece bay leaves
  • 3 piece cinnamon sticks
  • 1 pinch fenugreek seeds
  • 3 piece onions
  • 1 kg braising or stewing beef
  • 1.5 tsp grated ginger
  • 1.5 tsp crushed garlic
  • 2 tsp hot curry powder
  • 1 tsp garam masala
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp Kashmiri chilli powder
  • 1 tsp chilli powder
  • 1 tsp turmeric
  • 2 piece tomatoes
  • fresh coriander leaves

Preparation (8 steps)

Infuse Oil with Aromatics

5 min/248°F/Speed 1 120

Pour 100ml vegetable oil into the Thermomix bowl. Add 4 cardamom pods, 3-4 bay leaves, 3 cinnamon sticks, and a pinch of fenugreek seeds. Heat for 5 Min./120°C/Stufe 1 to release the aromas.

Sauté Onions

Add 3 medium onions, quartered, to the Thermomix bowl and chop for 3 Sek./Stufe 5. Scrape down the sides of the bowl with a spatula. Sauté for 10 Min./120°C/Stufe 1 until softened and lightly browned.

Continue to sauté the onions for 10 Min./120°C/Stufe 1 until softened and lightly browned.

Add Beef, Ginger, and Garlic

Add 1½ tsp grated ginger and 1½ tsp crushed garlic to the Thermomix bowl. Add 1kg braising or stewing beef, cut into 2-3cm cubes. Sauté in a pan until browned on all sides. This step cannot be done in the Thermomix.

Combine Spices and Tomatoes

Add the browned beef to the Thermomix bowl. Add 1½ tsp salt, 2 tsp hot curry powder, 1 tsp garam masala, 1 tsp ground coriander, 1 tsp ground cumin, 1 tsp Kashmiri chilli powder, 1 tsp chilli powder, and 1 tsp turmeric. Mix well for 1 Min./Stufe 2. Add 2 tomatoes, quartered, and cook for 5 Min./100°C/Stufe 1.

Simmer the Curry

60 min/203°F/Speed 1 95

Cover and simmer for 60 Min./95°C/Stufe 1. Check the consistency and add water if needed. Continue to simmer for another 30 Min./95°C/Stufe 1, or until the beef is tender.

Continue to simmer for another 30 Min./95°C/Stufe 1, or until the beef is tender.

Adjust Consistency and Finish

Add a little water to loosen the curry to your desired consistency. Boil for 7 Min./100°C/Stufe 1. Scatter over fresh coriander leaves before serving.
