Description

These soft cakes with coconut are a real delight! I often prepare them for a snack or to accompany a gourmet coffee. The grated coconut brings an irresistible exotic texture and fragrance. The recipe is very simple and quick to make with the Thermomix®, which is perfect when you want a little sweetness without spending hours in the kitchen. They are deliciously soft and slightly crispy on the edges. A real treat for the taste buds! You can also add chocolate chips for an even more gourmet version.

Ingredients (6 ingredients)

  • 30 noix Grated coconut(s)
  • 3 piece Egg(s)
  • 180 g Soft butter
  • 150 g Flour
  • 180 g Sugar
  • 1 pinch Salt

Preparation (8 steps)

Preheat the oven

Preheat the oven to 180°C (th.6).

Soften the butter

Thermomix® Setting
20 sec/Speed 3

Put the soft butter in the Thermomix bowl and mix 20 Sec./Level 3 to obtain a creamy consistency.

Add the sugar and coconut

Thermomix® Setting
30 sec/Speed 4

Add the sugar and grated coconut to the bowl. Mix 30 Sec./Level 4 until the mixture whitens.

Incorporate the egg yolks and flour

Thermomix® Setting
30 sec/Speed 4

Separate the egg whites from the yolks. Add the egg yolks, one by one, to the bowl and mix 20 Sec./Level 3 after each addition. Then add the flour and mix 30 Sec./Level 4.

Whisk the egg whites until stiff

Thermomix® Setting
3 min/Speed 3.5

In another bowl, whisk the egg whites until stiff with a pinch of salt. Use the Thermomix with the whisk: 3 Min./Level 3.5.

Gently fold in the egg whites

Gently fold the egg whites into the batter using a spatula. Do not use the Thermomix for this step so as not to break the whites.

Divide the batter and bake

Divide the batter into greased and floured individual molds. Bake and cook for 20 minutes.

Let cool slightly and cool

Let the soft cakes cool slightly before unmolding them, then let them cool completely.
