Description

This pork tenderloin with sofrito is a simple and delicious recipe, perfect for a quick weekday meal. The red pepper and onion sofrito gives the meat a sweet and savory touch, making it a very complete dish. I usually prepare it when I have little time, but I want to eat something rich and nutritious. It is also an excellent option to take advantage of vegetables that you have in the fridge. Go ahead and try it, you will love it! You can accompany it with white rice or a fresh salad.

Ingredients (8 ingredients)

  • 12 piece thin pork loin fillets
  • 2 piece large onions
  • 1 piece large red pepper
  • 1 pinch Powdered barbecue seasoning
  • 1 pinch Mill pepper
  • 40 ml Olive oil
  • 1 pinch Oregano
  • 1 pinch Salt

Preparation (4 steps)

Vegetable preparation

Cut the red pepper into four parts and then into thin strips. Cut the onions in half and slice them. Set aside.

Meat preparation

Salt and pepper the pork loin fillets, sprinkle with barbecue seasoning powder and a little oregano. Set aside.

Onion and pepper sofrito

Thermomix® Setting

Add 40 ml of olive oil, the sliced onions and the red pepper in strips to the bowl. Add salt and pepper. Sauté for 15 Min./Varoma/Reverse direction/Spoon speed until the vegetables are tender.

Cook the tenderloin

In a frying pan, heat a drizzle of oil well and cook the fillets on both sides until they are golden brown. Serve them accompanied with the onion and pepper sofrito.
