Description

This dish is a real treat! The tender wild boar loin, combined with the aromatic roasted potatoes and the crisp broccoli, is a feast for the senses. I especially like to make it in the fall when it's game season. The preparation is a bit more elaborate, but the result is well worth it. The potatoes and broccoli are roasted in the oven, while the loin is seared in a pan and then finished cooking in the oven. Served with a creamy Parmesan sauce – simply delicious! Perfect for a festive dinner.

Ingredients (10 ingredients)

  • 4 x Wild boar loin
  • 1 x Broccoli head
  • 800 Gramm New potatoes, small, waxy potatoes
  • 250 Milliliter Game stock
  • 200 Milliliter Cream
  • 1 Stück Parmesan
  • 1 Flasche Sunflower oil
  • 1 x Salt
  • 1 x Pepper
  • 1 x Sugar

Preparation (8 steps)

Pre-cook potatoes

Thermomix® Setting
15 min/212°F/Speed 1 100

Place 800 grams of new potatoes in the mixing bowl, cover with water and add a pinch of salt. Steam for 15 min./100°C/speed 1 in the simmering basket.

Prepare broccoli

Divide 1 broccoli head into florets. Bring water to a boil in a saucepan and add salt. Add the broccoli florets to the boiling water for 30 seconds, then immediately quench in ice-cold water. Then drain in a sieve.

Roast potatoes and broccoli

Place the pre-cooked potatoes and blanched broccoli on a baking sheet lined with parchment paper. Drizzle with some sunflower oil and season with salt and pepper. Roast in a preheated oven at 200 degrees Celsius convection for 20 to 30 minutes.

Prepare wild boar loin

Season 4 wild boar loins with salt and a little sugar. Let rest for five minutes.

Sear and cook the wild boar loin

Heat some sunflower oil in a pan. Sear the wild boar loin in it on all sides. Remove the meat from the pan, place it on the baking sheet as well and cook for another eight to ten minutes in the oven.

Prepare sauce

Deglaze the roasting juices in the pan with 250 milliliters of game stock and bring to a boil. Add 200 milliliters of cream and simmer for 10 min./90°C/speed 2.

Refine sauce

Thermomix® Setting
30 sec/140°F/Speed 3 60

Grate Parmesan very finely and stir it into the sauce little by little to thicken it. Finally, season with salt and pepper. 30 sec./60°C/speed 3.

Serve

Remove the loin from the oven and let it rest for two to three minutes before slicing. Then serve with the potatoes, broccoli and sauce.
