Description

This hearty ground beef and leek soup is a savory main course that can be prepared in about 45 minutes. With ground beef, leeks, processed cheese, and cream, it is particularly filling and warms you up on cold days. The soup is easy to prepare and is ideal for a quick lunch or dinner. It is rich in protein and is good for the whole family. The addition of celery provides an extra flavor note.

  • 250 g Onions
  • 20 g Oil
  • 500 g Leeks
  • 500 g Ground beef, mixed
  • 500 ml Vegetable broth
  • 200 g Processed cheese
  • 100 g Cream
  • 1 TL Salt
  • 0.5 TL Pepper
  • 0.5 TL Nutmeg, grated
  • 1 Stange(n) Celery

Preparation (7 steps)

Chop the onions

Place 250g of onions in the mixing bowl and chop for 3 sec./speed 5.

Sauté the onions

Add 20g of oil to the chopped 250g of onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare the leeks

Clean 500g of leeks, halve lengthwise and cut into fine strips.

Brown the meat

Brown 500g of ground beef in a separate pan until crumbly.

Add leeks and meat

Add 500g of leek strips and 500g of browned ground beef to the onions in the mixing bowl.

Deglaze and season

Add 500ml vegetable broth, 200g processed cheese, 100g cream, 1 tsp salt, 1/2 tsp pepper and 1/2 tsp nutmeg to the mixing bowl and cook for 20 min./100°C/speed 1.

Add celery

Clean 1 stalk(s) of celery, cut into slices and add to the mixing bowl. Cook for another 5 min./100°C/speed 1.
