Description

This Brazilian chicken and rice soup is a comforting and tasty dish, perfect for autumn evenings. I often prepare it when it is cold outside, and it always warms hearts! Tender chicken, fluffy rice and fresh vegetables combine wonderfully in a fragrant broth. It is a simple and economical recipe, ideal for a family meal. Add 6 cups of chicken stock, 540g of canned tomatoes and 0.5 tsp of savory. Salt and pepper. Mix 10 seconds/Stufe 3.

Cooking the rice

Bring to a boil by setting 10 minutes/100°C/Stufe 1. Add 1 cup of rice, reduce heat and cook 10 minutes/90°C/Stufe 1/Linkslauf.

Cooking the chicken

Meanwhile, cook 1 cup of chicken breast, cut into cubes, in a pan with salted water for 4 minutes. Drain and set aside.

Finalization and service

Add the cooked chicken and 0.5 cup of chopped fresh parsley to the Thermomix bowl. Gently mix 5 seconds/Stufe 1/Linkslauf. Pour into a tureen and serve hot.
