Description

This fresh spring vegetable soup is a comforting and flavourful dish, perfect to enjoy on warmer days. The combination of green beans, potatoes, peas, courgette, carrots, and fresh broad beans creates an explosion of colours and textures in every spoonful. The recipe is very simple to prepare with the Thermomix®, making it an ideal option for a quick and healthy meal. I usually add a little grated Parmesan cheese when serving to give it an extra touch of flavour, although it is also delicious without it. I hope you enjoy it as much as I do!

Ingredients (11 ingredients)

  • 300 gr green beans
  • 2 piece medium potatoes
  • 200 gr peas
  • 1 piece courgettes
  • 2 piece carrots
  • 150 gr fresh or frozen broad beans
  • 1.5 l Vegetable broth
  • 2 tbsp Olive oil
  • to taste Salt
  • Parmesan cheese (optional)
  • 1 piece onion

Preparation (4 steps)

Sauté the vegetables

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tablespoons of olive oil and 1 chopped onion to the Thermomix bowl. Program 3 Min./120°C/Stufe 1 to sauté the onion. Then, add 300 g of green beans (fresh or frozen) and 2 medium potatoes cut into small pieces.

Add the rest of the vegetables

Incorporate 200 g of peas, 150 g of fresh or frozen broad beans, 1 courgette cut into small pieces and 2 carrots cut into slices into the Thermomix bowl.

Cook the soup

Thermomix® Setting
30 min/212°F/Speed 1 100

Pour 1.5 litres of vegetable broth into the Thermomix bowl. Add salt to taste. Program 30 Min./100°C/Stufe 1 to cook the soup. Make sure all the vegetables are tender.

Serve

Serve the hot soup. Optionally, add Parmesan cheese flakes or tiles on top.
