Description

This apple-pumpkin soup with sweet-sour pumpkin and crispy chicken is a delicious main course for autumn. Preparation takes about 35 minutes and is designed for 2 servings. The soup is hearty and warming, ideal for cold days.

Ingredients (14 ingredients)

  • 15 g Yes! Of course organic clarified butter
  • 0.5 Beet Yes! Of course organic cress
  • 1.5 EL Yes! Of course organic pumpkin seed oil
  • 1.5 Stück Allspice berries
  • 0.5 Prise Nutmeg
  • Salt
  • Black pepper from the mill
  • 0.5 Stück Yes! Of course organic Hokkaido pumpkin (à approx. 900 g)
  • 1 Stück Yes! Of course organic apples (e.g. Topaz)
  • 0.5 EL Yes! Of course organic olive oil
  • 1 Stück Yes! Of course organic chicken fillets
  • 50 ml Yes! Of course organic whipped cream
  • 0.5 Stück Yes! Of course red organic onion
  • 0.5 Stück Organic lemon

Preparation (8 steps)

Prepare pumpkin and apples

Preheat oven to 200 °C (convection). Clean pumpkin, remove seeds and fibers with a spoon, cut flesh into wedges. Quarter and core apples. Mix everything with 0.5 tbsp olive oil, salt and pepper.

Bake pumpkin and apples

Place pumpkin and apples on a baking sheet and bake on the middle rack for approx. 30 minutes.

Simmer chicken fillets

Meanwhile, rinse 1 Yes! Of course organic chicken fillets with cold water and pat dry. Simmer in 800 ml of salted water for 15 minutes.

Puree soup

Thermomix® Setting
30 sec/Speed 8-10

Remove chicken fillets from the stock and set aside. Add half of the pumpkin wedges and apples with 500 ml chicken stock and 50 ml Yes! Of course organic whipped cream to the mixing bowl and puree for 30 sec./speed 8-10. Season with salt, pepper and 0.5 pinch of nutmeg.

Prepare pumpkin and onions

Cut remaining pumpkin wedges into pieces. Peel 0.5 Yes! Of course red organic onion and cut into wedges. Cut the peel off 0.5 organic lemon with a knife, also removing the skin. Cut out the fillets between the dividing skins.

Cook pumpkin-onion mixture

Bring onion, pumpkin, 1.5 allspice berries, sugar and Condimento bianco to a boil in a pot. Remove from heat. Add lemon fillets, stir carefully, salt and pepper. Let cool for 10 minutes.

Fry chicken until crispy

Meanwhile, heat 15 g Yes! Of course organic clarified butter in a pan. Roughly tear the chicken fillets and fry in it for about 10 minutes over low heat until crispy.

Arrange

Reheat soup if necessary. Cut 0.5 patch Yes! Of course organic cress from the patch. Now arrange the chicken and soup.
