Description

This simple pasta dish is a real summer classic! The combination of sun-ripened cherry tomatoes, spicy rocket and savory Parmesan makes this spaghetti a taste experience. I particularly like making this pasta when I need to be quick, but still want something fresh and delicious on the table. The Ajvar provides a pleasant spiciness that goes perfectly with the sweet tomatoes. If you like it milder, you can of course leave it out. An ideal dish for a quick lunch or a light dinner!

Ingredients (7 ingredients)

  • 300 g Spaghetti
  • 1 Handvoll Rocket
  • 10 piece Cherry tomato(es)
  • 2 tbsp Parmesan
  • 1 Zehe(n) Garlic
  • 1 Prise(n) Salt and pepper
  • 1 tsp Ajvar spicy

Preparation (6 steps)

Grate Parmesan

Add 2 tbsp Parmesan to the mixing bowl and chop for 10 sec/level 10. Transfer and set aside.

Chop garlic

Thermomix® Setting
3 sec/Speed 7

Put 1 clove of garlic in the mixing bowl and chop for 3 sec/level 7. Scrape down with the spatula.

Sauté tomatoes

Thermomix® Setting
5 min/248°F/Speed 1 120

Add some oil to the mixing bowl, add the halved 10 cherry tomatoes and the chopped garlic. Season with salt and pepper and sauté for 5 min./120°C/level 1.

Add Ajvar

Thermomix® Setting
10 sec/Speed 2

Add 1 tsp of Ajvar spicy to the tomatoes and stir in for 10 sec/level 2.

Add spaghetti and cooking water

Thermomix® Setting
20 sec/Speed 3/Linkslauf Reverse

Add the cooked 300 g spaghetti and approx. 8 tbsp of the cooking water to the mixing bowl. Season with salt and pepper and mix for 20 sec/level 3/reverse.

Mix in rocket and Parmesan

Thermomix® Setting
10 sec/Speed 2/Linkslauf Reverse

Add the grated Parmesan and the chopped rocket to the mixing bowl and fold in for 10 sec/level 2/reverse.
