Description

This Thermomix® recipe for spaghetti with mushroom and bell pepper ragout is a hearty and healthy main course with fresh mushrooms, bell peppers, and whole wheat spaghetti. The vegetarian pasta is refined with onions, garlic, and spices. Prepared in 45 minutes, the recipe yields 4 servings. Ideal for a quick family dinner or lovers of Mediterranean cuisine.

Ingredients (12 ingredients)

  • 1 Prise Salt
  • 1 Prise Pepper
  • 1 Prise Chili powder
  • 1 Stück Onion
  • 1 Zehe Garlic
  • 500 g Mixed mushrooms (e.g. button mushrooms, shiitake)
  • 2 Stück Red pointed pepper
  • 400 g Whole wheat spaghetti
  • 2 Scheibe/n Ciabatta bread
  • 4 EL Olive oil
  • 125 ml Orange juice
  • 4 EL Parmesan or vegetarian hard cheese

Preparation (9 steps)

Prepare salt water

Bring 3-4 liters of water and 3-4 teaspoons of salt to a boil in a pot. This is not done in the Thermomix.

Chop onion and garlic

Place 1 peeled onion in the mixing bowl and chop for 3 sec/speed 5. Add 1 clove of garlic and chop for 3 sec/speed 7.

Sauté onion and garlic

Add 2 tbsp olive oil and sauté for 3 min/120°C/speed 1.

Prepare mushrooms and bell peppers

Clean 500 g of mixed mushrooms, wash if necessary, and cut into small pieces. Wash 2 red pointed peppers, clean and cut into strips. Set aside.

Cook noodles

Cook 400 g whole wheat spaghetti in salted water according to package directions. Drain and set aside.

Roast bread

Tear 2 slices of ciabatta bread into small pieces. Fry in a pan with 2 tbsp olive oil until crispy and remove. This is not done in the Thermomix.

Fry mushrooms and bell peppers

Put mushrooms and bell peppers in the mixing bowl. Fry for 5 min/Varoma/Reverse speed 1.

Prepare sauce

Add 125 ml orange juice, salt, pepper and chili powder and simmer for 3 min/100°C/Reverse speed 1.

Serve

Mix the noodles with the mushroom and bell pepper ragout and serve with roasted bread and 4 tbsp grated Parmesan or vegetarian hard cheese.
