Description

This simple and quick pasta dish is a real treat! The creamy lemon parmesan sauce coats the spaghetti and provides a refreshing taste experience. I love how the acidity of the lemon harmonizes perfectly with the spicy parmesan. Ideal for a quick lunch or a light dinner. Ingredients (7 ingredients)

  • 400 g Spaghetti
  • 150 ml Olive oil
  • 2 piece Organic lemons
  • 100 g Parmesan
  • Sea salt
  • to taste Pepper
  • Basil

Preparation (6 steps)

Prepare lemon zest and juice

Wash the lemons hot and dry them. Grate the peel of both lemons and squeeze out 100 ml of lemon juice. Set both aside.

Grate Parmesan

Place 100 g of Parmesan in pieces in the mixing bowl and chop for 10 sec./speed 10. Transfer and set aside.

Prepare sauce

Add 150 ml olive oil, 100 ml lemon juice and the grated Parmesan to the mixing bowl and stir for 20 sec./speed 3.

Cook spaghetti

10 min/212°F/Speed 1 100

Add 400 g spaghetti and 1 liter of water to the mixing bowl and cook according to package directions for 10 min./100°C/speed 1. Use steamer basket.

Mix spaghetti and sauce

Thermomix® Setting
10 sec/Linkslauf/Speed 2 Reverse

Drain the spaghetti, collecting 1 ladle of cooking water. Add spaghetti to the mixing bowl with the sauce and gently mix with the spatula. If necessary, add some cooking water until a creamy sauce is formed. 10 sec./reverse/speed 2.

Serve spaghetti with basil, some Parmesan and lemon zest.
