About this recipe

Spaghetti with pieces of sausage - a dish that brings back childhood memories for me. My grandma used to cook this for us grandchildren when we visited her. It was never a complicated meal, but it always tasted good and made the children's eyes shine. I have adapted and refined the recipe over the years, but the basic idea is still the same: a quick, simple and delicious dish for the whole family. The main protagonists of this dish are of course the spaghetti and the Vienna sausages. The spaghetti provide the carbohydrate base and give the dish substance. I prefer to use spaghetti of thickness 5, as they offer a good balance between firmness to the bite and cooking time. The Vienna sausages bring the savory taste into play. Make sure you use good quality sausages here, as the taste of the sausage has a significant influence on the entire dish. I prefer Vienna sausages from the butcher, as these usually contain fewer additives and taste more intense. The tomato sauce with basil provides the fruity and slightly sweet note. Of course, you can also use a homemade tomato sauce, but for the quick version, a ready-made sauce is absolutely sufficient. The salt is of course essential to season the cooking water and to enhance the taste of the spaghetti. The preparation in the Thermomix® is very simple. First, the sausages are cut into bite-sized pieces and "spiked" with the spaghetti. This may be a bit fiddly, but it's worth it, because the flavors of sausage and pasta combine optimally. Then the water is brought to a boil in the mixing bowl and the spaghetti sausages and the remaining spaghetti are added. It is important that you deactivate the reverse function so that the spaghetti are not chopped up. After the cooking time, the tomato sauce is added and heated briefly. Make sure that the sauce does not get too hot, otherwise it may splash. For a vegetarian or vegan version, you can simply replace the Vienna sausages with plant-based alternatives. There is now a large selection of vegan sausages that come very close to the original in terms of taste. You can also vary the tomato sauce. Instead of the basil variety, you can also use a sauce with herbs of Provence, garlic or chili. If you like it a little spicier, you can also add a pinch of chili flakes. Serve the spaghetti with pieces of sausage best in deep plates. A dollop of fresh Ricotta or a few basil leaves make the dish visually even more appealing. A fresh salad or a piece of bread for dipping in the sauce goes well with this. If there are any leftovers, you can easily store them in the refrigerator. The spaghetti still taste good the next day if you heat them briefly in the microwave or in a pan. You can also prepare the dish well in advance. The spaghetti sausages can be skewered the day before and stored in the refrigerator. This saves you time when preparing the dish the next day.
