Description

I love preparing these spaghettis with clams! It's a simple but so tasty dish, perfect for a sunny lunch or a dinner with friends. The clams, well cleaned, bring a delicate marine flavor that goes perfectly with garlic, chili and fresh parsley. The touch of white wine sublimates everything. The preparation is quite fast, about an hour, and the result is always a success. Don't hesitate to add a little more chili if you like spicy dishes! A real treat from the sea.

Ingredients (9 ingredients)

  • 400 g spaghetti
  • 2 kg clams
  • 4 clove of garlic
  • 0.5 piece bird's eye chili pepper
  • 5 c. à s. of olive oil
  • 0.5 verre of dry white wine
  • 0.5 bouquet of flat parsley
  • 1 pinch of fine salt
  • 1 pinch of pepper

Preparation of the clams

Rinse the clams abundantly with cold water. Place them in a salad bowl with half a teaspoon of fine salt and cover with cold water. Repeat this operation three times to eliminate all residues. Rinse them one last time and drain them.

Chop the garlic and parsley

Put 2 cloves of garlic and half of the bunch of flat parsley in the Thermomix bowl. Chop finely for 3 Sec./Stufe 7. Set aside in a bowl.

Preparation of the clam sauce

Put the remaining 2 cloves of garlic and the bird's eye chili pepper in the Thermomix bowl. Chop for 3 Sec./Stufe 7. Add the olive oil and a small spoonful of the chopped garlic-parsley mixture. Sauté for 3 Min./120°C/Stufe 1.

Cooking the clams

Thermomix® Setting
10 min/212°F/Linkslauf Speed 1 100 Reverse

Add the clams and the dry white wine in the Thermomix bowl. Set 10 Min./100°C/Linkslauf Stufe 1. Stir delicately with the spatula from time to time to ensure uniform cooking.

Filter and reduce the cooking juice

Thermomix® Setting
5 min/Varoma/Speed 1 Varoma

Remove the clams from the bowl and filter the cooking juice through a fine sieve. Put the filtered juice back into the Thermomix bowl. Cook for 5 Min./Varoma/Stufe 1 without the measuring beaker to reduce the juice by a third.

Preparation of the clams

Remove half of the clams from their shell. Keep the other half with their shell. Keep all the clams (with and without shell) in a covered salad bowl.

Cooking the spaghetti

Meanwhile, boil a large volume of salted water in a saucepan. Add the spaghetti and cook them according to the instructions on the package until they are al dente. Drain the spaghetti.

Final mixture

1 min/140°F/Linkslauf Gentle stir speed 60 Reverse

Add the drained spaghetti, the clams (with and without shell) and the rest of the chopped garlic-parsley mixture in the Thermomix bowl with the reduced juice. Mix delicately for 1 Min./60°C/Linkslauf Sanftrührstufe. Season with salt, pepper and a drizzle of olive oil. Serve immediately.
