Ingredients (8 ingredients)

  • 0.25 cup olive oil
  • 1 piece large eggplant, peeled and coarsely chopped
  • 1 piece medium red bell pepper, cut into thin strips
  • 1 piece green bell pepper, cut into thin strips
  • 1 piece large onion, diced
  • 1 cup coarsely shredded carrot
  • salt
  • crushed red pepper flakes

Place the coarsely chopped eggplant in a colander, lightly salt it, and let it drain for about 45 minutes to remove excess moisture.
