Description

Diese erfrischenden, würzigen Gurkenstücke sind ein echter Knaller! Ich mache sie besonders gerne im Sommer, wenn Gurken Saison haben. Die leichte Schärfe des Chilis harmoniert perfekt mit der Frische der Gurke. Das Rezept ist super einfach und schnell zubereitet, ideal also für spontane Grillabende oder als kleiner Snack zwischendurch. Bei mir sind die Spicy Cucumber Bites immer der Renner, weil sie so herrlich anders sind und einfach köstlich schmecken. Wer es nicht so scharf mag, kann natürlich etwas weniger Chilipulver verwenden.

Ingredients (10 ingredients)

  • 1 piece English cucumber
  • 1 tsp kosher salt
  • 2 piece scallions, white and light green parts only, finely chopped
  • 2 tbsp rice vinegar
  • 2 clove garlic, finely chopped
  • 0.25 inch fresh ginger, finely chopped
  • 1 tbsp hot chile oil
  • 1 tbsp Korean chile powder
  • 1 tsp white sugar
  • 0.5 tsp fish sauce

Preparation (6 steps)

Prepare the cucumbers

Cut the cucumber into 4-inch pieces and then cut each piece into quarters. Place the cucumber pieces in a bowl, add 1 teaspoon of kosher salt, and mix until coated. Let the cucumbers stand at room temperature until liquid has been extracted, about 30 minutes; drain the cucumbers thoroughly.

Chop garlic and ginger

Place 2 cloves of garlic into the mixing bowl and chop for 3 seconds/Stufe 7.

Add ginger and mix

Add ¼ inch piece of fresh ginger, finely chopped, to the mixing bowl and mix for 2 seconds/Stufe 5.

Combine ingredients

Add 2 scallions, white and light green parts only, finely chopped, 2 tablespoons rice vinegar, 1 tablespoon hot chile oil, 1 tablespoon Korean chile powder, 1 teaspoon white sugar, and ½ teaspoon fish sauce to the mixing bowl. Mix for 10 seconds/Stufe 3.

Mix cucumbers with sauce

Add the drained cucumbers to the mixing bowl and mix for 5 seconds/Linkslauf Stufe 2 to combine. Ensure the cucumbers are well coated with the sauce.

Chill and serve

Transfer the cucumber mixture to a non-reactive bowl, cover with plastic wrap, and refrigerate until chilled and flavors have blended, at least 30 minutes. Serve cold.
