Description

This sautéed spinach and mushrooms dish, topped with crispy golden onions, is a delightful and healthy meal that's ready in under 40 minutes. I've been making this recipe for years, and it's always a hit! The earthy mushrooms and vibrant spinach are perfectly complemented by the sweet and crunchy onions. It's a great way to get your greens in, and it's naturally vegetarian. Feel free to add a pinch of red pepper flakes for a little extra heat. This dish is perfect as a light lunch or a side dish to your favorite protein.

Ingredients (10 ingredients)

  • 3 tbsp sunflower oil
  • 0.5 tsp cumin
  • 2 piece medium onions
  • 250 g pack chestnut mushrooms
  • 0.5 tsp garam masala
  • 0.5 tsp garlic
  • 1 tbsp finely chopped fresh root ginger
  • 1 piece small green chilli
  • 4 pack ready washed young leaf spinach
  • 0.5 tsp turmeric

Sautéing Mushrooms and Onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp sunflower oil and ½ tsp cumin to the Thermomix bowl. Heat for 3 Min./120°C/Stufe 1. Add 2 medium onions, chopped, and 250g chestnut mushrooms, sliced. Cook for 10 Min./120°C/Stufe 1, stirring occasionally with the spatula to ensure even cooking.

Adding Spices and Spinach

Thermomix® Setting
2 min/212°F/Speed 1 100

Sprinkle in ½ tsp garam masala, add ½ tsp garlic, 1 tbsp finely chopped fresh root ginger, and 1 small green chilli, chopped, to the Thermomix bowl. Stir to mix with the spatula. Add 4 bags ready washed young leaf spinach. Cook for 2 Min./100°C/Stufe 1, or until the spinach has wilted. Season with salt to taste.

Preparing Golden Onions

Thermomix® Setting
5 min/248°F/Speed 1 120

Remove the spinach and mushroom mixture from the Thermomix bowl and set aside. Add 1 tbsp sunflower oil and ½ tsp turmeric to the Thermomix bowl. Add the remaining chopped onion. Cook for 5 Min./120°C/Stufe 1, until the onion is golden brown, stirring occasionally with the spatula.

Serve the spinach and mushroom mixture hot, sprinkled with the golden onions.
