Description

This dish is a feast for all lovers of hearty flavors! The wild boar neck steaks, marinated with herbs and spices, are perfectly complemented by the forest mushroom and potato pan. I always make the marinade the day before so that the meat can soak up all the flavors. The preparation is a bit more elaborate, but the result is absolutely worth it. Especially in autumn/fall, when the mushrooms come fresh from the forest, it tastes simply delicious. A hearty meal for special occasions!

Ingredients (15 ingredients)

  • 1000 Gramm Wild boar neck
  • 1 x Mixed forest mushrooms
  • 600 Gramm Potatoes, new potatoes - firm to cook
  • 1 Bündel Sage leaves
  • 200 Milliliter Sunflower oil
  • 1 Schuss Raspberry vinegar
  • 1 Esslöffel Mustard, medium hot
  • 1 Esslöffel Tomato paste
  • 1 Teelöffel Rosemary, finely chopped
  • 1 Teelöffel Thyme, finely chopped
  • 1 Teelöffel Paprika powder, mild
  • 2 Teelöffel Salt
  • 1 Teelöffel Pepper
  • 2 Zehe Garlic, crushed and chopped
  • 1 Esslöffel Butter

Preparation (8 steps)

Chop garlic

Put 2 cloves of garlic in the mixing bowl and chop for 3 sec./speed 7. Scrape down with the spatula.

Prepare marinade

Put 200 ml sunflower oil, 1 dash of raspberry vinegar, 2 tsp salt, 1 tsp pepper, 1 tsp mild paprika powder, 1 tbsp mustard, 1 tbsp tomato paste, 1 tsp rosemary finely chopped, 1 tsp thyme finely chopped and the chopped garlic in the mixing bowl and stir for 20 sec./speed 3.

Marinate wild boar

Cut about two centimeter thick steaks from the 1 kg wild boar neck. Place the steaks together with the marinade in a vacuum bag, knead a little and leave to rest in the refrigerator overnight. Alternatively, place in a bowl and cover with cling film.

Prepare potatoes

Wash, halve or quarter 600 g of new potatoes and place in a suitable dish or pan.

Bake potatoes

Drizzle the potatoes with a little sunflower oil and bake in the oven at 250 degrees Celsius for 20 minutes.

Prepare mushrooms and sage

Clean the forest mushrooms and, if necessary, cut into bite-sized pieces. Put 1 tbsp butter in the pan/dish.

Toss mushrooms and sage

Add the mushrooms and sage leaves to the potatoes and toss until everything is evenly roasted and the potatoes are golden brown. Season with salt and pepper.

Grill steaks

Scrape off the marinade from the steaks a little. Preheat the grill for direct heat and grill the steaks for about ten minutes on each side (the cooking time varies depending on the grill and temperature development). So just cut and test.
