Description

This marzipan apple star is a festive pastry that is especially good for Christmas or a cozy brunch. The combination of juicy apples, sweet marzipan, and crunchy hazelnuts makes this cake a special treat. Preparation takes about 2 hours, including the dough's rising time. The recipe is designed for a large portion and is ideal for pampering family and friends.

Ingredients (15 ingredients)

  • 20 g Yeast
  • 250 g Milk
  • 60 g Sugar
  • 1 TL Vanilla extract
  • 500 g Wheat flour
  • 1 Stück Egg
  • 60 g Soft butter
  • 1 Prise Salt
  • 200 g Marzipan
  • 2 Stück Medium-sized apples
  • 150 g Ground hazelnuts
  • 60 g Sugar
  • 1 TL Cinnamon
  • 1 TL Vanilla extract
  • 80 g Melted butter

Preparation (10 steps)

Dissolve yeast and sugar in milk

Add 20 g yeast and 60 g sugar to 250 g milk in the mixing bowl and dissolve for 1 minute/37°C/speed 2.

Prepare the dough

Add 500 g wheat flour, 1 egg, 60 g soft butter, 1 tsp vanilla extract and 1 pinch of salt and knead for 4 minutes/kneading setting to form a dough.

Let the dough rise

Let the dough rise in a warm place for 1 hour.

Chop the marzipan

Put 200 g marzipan in pieces into the mixing bowl and chop for 10 seconds/speed 5. Transfer.

Chop the apples

Core 2-3 medium-sized apples, cut into pieces and put them in the mixing bowl and chop for 5 seconds/speed 5. Transfer.

Prepare the filling

Add chopped marzipan, chopped apples, 150 g ground hazelnuts, 60 g sugar, 1 tsp cinnamon, 1 tsp vanilla extract and 80 g melted butter to the mixing bowl and stir for 20 seconds/speed 3.

Roll out and cover the dough

Divide the risen dough into 3 portions on the dough mat and roll out each dough piece into a circle of about 30-35 cm. Place one dough circle on the prepared large round stone, spread with half of the filling, place the second dough circle on top, spread the remaining filling, place the third dough circle on top.

Shape the star

Now place a small bowl in the middle and cut 12 pieces up to the bowl. Always take 2 strands, twist them around themselves twice and form a star tip - continue with all pieces.

Let the star rise

Let the shaped star rise for about 20 minutes.

Bake the star

Bake in a preheated oven at 180 degrees top/bottom heat for 35-40 minutes, then garnish with sugar glaze or powdered sugar as desired.
