Description

This Strawberry Bavarian delicacy is a true treat for warm days! I especially like to make it in the spring, when the strawberries are fresh and aromatic. The combination of creamy Bavarian delicacy and fruity strawberries is simply unbeatable. The preparation takes some time, but the result is worth every minute. The Bavarian delicacy is perfect for birthdays, brunch or simply as a sweet surprise for family and friends. It can be prepared well in advance and stored in the refrigerator. An absolute highlight for all strawberry lovers!

Ingredients (9 ingredients)

  • 250 ml milk
  • vanilla extract
  • 3 piece egg yolks
  • 120 g sugar
  • 500 g strawberries
  • 18 g leaf gelatin
  • 150 ml fresh cream
  • strawberries
  • meringues

Milk and vanilla in the bowl

Pour 250 ml of milk into the bowl. Add vanilla extract to taste. Heat the milk until it almost boils. Set 5 Min./90°C/Speed 1.

Egg yolks and sugar in the bowl

Add 3 egg yolks and 120 g of sugar into the bowl. Whip the mixture until it is fluffy and frothy. Set 3 Min./Speed 4 with the butterfly.

Milk and vanilla to egg yolks

Pour the hot, vanilla-flavored milk into the bowl with the egg yolks and sugar. Gently mix with the spatula to blend the ingredients.

Cooking the cream

Cook the mixture in the bowl until it reaches 82°C. Set 8 Min./80°C/Speed 2. Check the temperature with a cooking thermometer.

Strawberries and sugar in the bowl

Add 500 g of strawberries cut into pieces and the sugar into the bowl. Cook for 10 minutes over low heat, stirring occasionally. Set 10 Min./100°C/Speed 1.

Blend the strawberries

Blend the cooked strawberries in the bowl until you obtain a smooth puree. Set 30 Sek./Speed 8.

Gelatin in the bowl

Add the leaf gelatin (previously soaked and squeezed) into the bowl with the still hot strawberry puree. Mix to dissolve the gelatin. Set 1 Min./50°C/Speed 2.

Cream in the bowl

Add 150 ml of fresh cream into the bowl. Whip the cream with the butterfly. Set 2 Min./Speed 3.5.

Combine the mixtures

Pour the strawberry mixture into the bowl with the whipped cream. Gently mix with the spatula to blend the ingredients.

Pour into the mold

Pour the mixture into a 22 cm diameter ring-shaped cake mold with a little water sprayed inside. Let the cake rest in the refrigerator for at least 8 hours.

Decorate and serve

Unmold the Bavarian delicacy onto a plate and decorate with halved strawberries and pieces of meringue. Serve and enjoy slice after slice!
