Description

This apple strudel with puff pastry is a dessert that I often prepare when I want something good and quick. The crispy puff pastry encloses a filling of apples scented with cinnamon and enriched with raisins and pine nuts. It is perfect for a snack, breakfast or as a dessert after dinner. The preparation is really simple and quick, also ideal for those who do not have much experience in the kitchen. A tip? Serve it warm with a scoop of vanilla ice cream for an even more delicious experience! It is prepared in less than an hour and is a real success.

Ingredients (11 ingredients)

  • 1 rotolo puff pastry
  • 20 g butter
  • 1 piece egg
  • 500 g apples
  • 50 g bread crumbs
  • 30 g butter
  • 50 g sugar
  • 50 g raisins
  • 30 g pine nuts
  • 1 tsp cinnamon
  • 0.5 piece grated lemon zest

Preparation of toasted breadcrumbs

Thermomix® Setting
2 min/122°F/Speed 2 50

Put 30g of butter in the bowl and melt for 2 Min./50°C/Stufe 2. Add 50g of breadcrumbs and toast for 3 Min./100°C/Stufe 3. Transfer to a bowl and set aside. Soak 50g of raisins in warm water for a few minutes.

Toasting the breadcrumbs

Add 50g of breadcrumbs and toast for 3 Min./100°C/Stufe 3. Transfer to a bowl and set aside.

Preparation of the apple filling

Peel 500g of apples, remove the core and cut them into thin slices. Put the apple slices in a bowl with 50g of sugar, 30g of pine nuts, the drained raisins, 1 teaspoon of cinnamon and the grated zest of 1/2 lemon. Mix well.

Assembly of the strudel

Unroll 1 roll of puff pastry and brush it with 20g of melted butter. Spread the toasted breadcrumbs on top and then the apple mixture.

Roll up and seal the strudel

Roll up the puff pastry, sealing the edges well.

Baking in the oven

Brush the surface with 1 beaten egg and make some cuts on the surface. Bake in a static oven preheated to 200°C for about 30 minutes.
