Description

This potato stew with sausage is a comforting and flavorful dish, perfect for cooler days. The combination of tender potatoes with spicy sausage is simply delicious. It's a recipe I make often at home because it's very easy to prepare and everyone always likes it. Also, you can adjust the level of spiciness to suit everyone's taste.   • 2 piece sausages
  • 1 piece onion
  • 2 clove garlic
  • 1 hoja bay leaf
  • 1 pinch sweet or spicy paprika
  • 1 chorro oil
  • 1 pinch salt

Chop garlic and onion

This potato stew with sausage is a dish that reminds me of my grandmother's cooking. She, with her culinary wisdom passed down from generation to generation, prepared simple but flavorful stews. Although she didn't have a Thermomix®, the spirit of this dish is the same: humble ingredients transformed into a comforting meal. The potatoes are the base of this stew. I use potatoes of a variety that remain firm when cooked, such as monalisa or agria, so that they do not fall apart too much during cooking. The sausage, of course, is the soul of the dish. A good Iberian sausage, with its infiltrated fat and intense flavor, provides an unmatched depth of flavor. If you prefer a spicier touch, you can use spicy sausage, or add a pinch of cayenne pepper to the stew. The onion and garlic, slowly fried, create a fundamental aromatic base. The bay leaf, a simple but powerful leaf, adds a subtle herbal touch that enhances all other flavors. The paprika, whether sweet or spicy, gives it a characteristic reddish color and a delicious smoky flavor. The Thermomix® greatly facilitates the preparation of this stew. By chopping the onion and garlic finely, they integrate better into the stew and release all their aroma. It is important to fry the onion and garlic well before adding the sausage, so that they caramelize and add sweetness to the dish.
