Description

This Thermomix® recipe for stuffed mushrooms with herb crust is a hearty finger food with ham, fresh herbs such as chervil and parsley, as well as mushrooms and onions. Preparation takes about 50 minutes and yields 4 servings. Ideal as a vegetarian appetizer, warm snack for parties or as part of a Mediterranean buffet.   • 100 g Ham
  • 8 Stiele Chervil
  • 5 Stiele Parsley
  • 8 Stiele Thyme
  • 8 Giant mushrooms
  • 2 Onion
  • 2 EL Butter
  • 100 g Double cream fresh cheese
  • 50 g Gruyère
  • 1 Egg yolk
  • 2 EL Breadcrumbs
  • Salt
  • Pepper
  • 4 EL Olive oil

Preparation (9 steps)

Prepare ham

Cut 100 g ham into cubes and set aside.

Prepare herbs

Wash and shake dry 8 sprigs of chervil, 5 sprigs of parsley and 8 sprigs of thyme. Pluck off the herb leaves, except for 4 sprigs of thyme, and set aside.

Prepare mushrooms

Clean 8 giant mushrooms, remove stems and set aside.

Chop onion

Peel, quarter and place 2 onions in the mixing bowl. Chop 3 sec./speed 5.

Sauté mushroom stems and onion

Add 2 tbsp butter and the chopped mushroom stems and sauté 3 min./120°C/speed 1.

Chop herbs

Place the plucked herbs in the mixing bowl and chop 3 sec./speed 5.

Prepare filling

Add diced ham, chopped herbs, 100 g double cream fresh cheese, 50 g Gruyère, 1 egg yolk and 2 tbsp breadcrumbs and stir for 20 sec./speed 3. Season with salt and pepper.

Fill mushrooms

Place mushrooms in a baking dish or ovenproof pan. Fill with herb mixture. Place remaining thyme next to the mushrooms. Drizzle everything with 4 tbsp olive oil.

Bake mushrooms

Bake mushrooms in a preheated oven (electric oven: 220 °C/convection oven: 200 °C) for 15--20 minutes. Remove from the oven and serve in the pan or dish or arrange 2 mushrooms per guest on a plate.
