Description

This recipe for hearty steaks with crispy onion roast is an absolute highlight! The combination of juicy pork neck steak and the sweet and savory onions is simply unbeatable. I like to make this dish when friends come to visit because it is uncomplicated and everyone likes it. Preparation with the Thermomix® makes it particularly easy to chop the onions perfectly and stir the sauce until creamy. A touch of paprika and fresh parsley round off the dish. Ideal for a cozy evening!

Ingredients (12 ingredients)

  • 3 piece Large onions
  • 2 piece Eggs (M)
  • to taste Salt
  • to taste Pepper
  • 100 g Wheat flour Type 405
  • 300 g Breadcrumbs
  • 6 tbsp Rapeseed oil
  • 4 piece Pork neck steaks (à 250 g)
  • 200 ml Vegetable broth
  • 15 g Parsley (curly)
  • 0.5 tsp Paprika powder (hot)
  • 10 g Wheat flour Type 405

Preparation (7 steps)

Prepare onions

Peel three large onions and cut into rings about 1 cm wide. Use the larger, outer rings for breading, set the smaller rings aside.

Prepare breading

Whisk two eggs (M) in a deep plate with a fork, season with salt and pepper. Place 100 g wheat flour Type 405 and 300 g breadcrumbs in separate deep plates.

Bread onion rings

First turn the large onion rings in the flour, then pull through the egg and finally turn in the breadcrumbs. Place on a baking sheet with baking paper. Drizzle with 3 tablespoons of rapeseed oil.

Prepare onion sauce

Put the set aside smaller onion pieces into the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Sauté onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 tablespoon of rapeseed oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Add 10 g wheat flour Type 405 and 200 ml vegetable broth, season with salt and pepper and simmer for 5 min./100°C/speed 2.

Wash 15 g parsley (curly), shake dry, put in the mixing bowl and chop for 3 sec./speed 8.

This recipe for steaks with onion roast came about when I was looking for a way to spice up a simple dish that could still be on the table quickly. I love the contrast between the hearty meat and the sweet onion, and the crispy breading gives the whole thing an extra kick. It reminds me of my childhood, when my grandma used to make similar dishes, just without a Thermomix®. The ingredients are deliberately kept simple. The large onions are the heart of the dish. They bring sweetness and spice, especially when caramelized. The outer rings are breaded and fried, giving them a wonderfully crispy texture. The smaller pieces of onion form the basis for the sauce, which gets an intense aroma from being sautéed in the Thermomix®. The pork neck steak is a good choice because it is nice and juicy and streaky. It absorbs the flavors of the onion sauce well. The parsley provides a fresh note and the paprika gives the dish a slight spiciness. When preparing with the Thermomix®, it is important not to chop the onions too finely, as they can burn when sautéing. 3 seconds on speed 5 is ideal. Make sure that the onions do not get too dark when sautéing. The temperature of 120°C is ideal here. The sauce should not become too thick. If it is too thick, you can add some vegetable broth. The parsley is best added just before serving so that it retains its fresh color. For a vegetarian version, you could replace the steaks with thick slices of Halloumi or tofu. These can also be breaded and fried well. Instead of pork neck steak, you can also use chicken breast fillet. There are no limits to your imagination when it comes to the spices. Garlic, thyme or rosemary also go well with this dish. For a vegan version, you can use egg substitute and vegetable margarine for frying. As a side dish, boiled potatoes, mashed potatoes or spaetzle go perfectly with the steaks with onion roast. A fresh salad rounds off the dish. I like to serve it with a simple lettuce salad with vinegar and oil. Leftovers of the dish can be stored in the refrigerator. However, the breaded onion rings are no longer as crispy the next day. The sauce can be warmed up well. The dish is also good for preparation. The onion rings can be breaded the day before and stored in the refrigerator. The sauce can also be prepared and warmed up before serving.
