Description

This sushi rice bowl is a great alternative to classic sushi and super easy to prepare! The rice is cooked loosely and lightly in the Thermomix®, while mango, cucumber and avocado provide a fruity-fresh note. The tuna provides a good portion of protein. I love making this dish in the summer as it is served cold and perfect for a light lunch or brunch with friends. If you like, you can add some wasabi or ginger. An absolute favorite recipe that is always well received!

Ingredients (9 ingredients)

  • 200 g Sushi rice
  • 4 tbsp Salt
  • 1 piece ripe Mango
  • 1 piece Cucumber
  • 1 piece small red Onion
  • 2 tbsp black Sesame
  • 2 piece Avocados
  • 2 can Tuna
  • 2 tbsp Mayonnaise

Preparation (5 steps)

Cook rice

Thermomix® Setting
25 min/212°F/Speed 1 100

Put 200 g sushi rice and 800 ml water into the mixing bowl and cook in the simmering basket for 25 min./100°C/speed 1. Then season the rice with 4 tbsp salt and rice vinegar to taste and let it cool.

Prepare mango, cucumber and onion

Peel 1 ripe mango and cut into cubes. Wash 1 cucumber, cut lengthwise, core and dice. Peel 1 small red onion and cut into fine rings. Mix mango, cucumber and onion in a bowl. Stir in 2 tbsp black sesame.

Prepare avocado cream

Halve 2 avocados, remove the pulp from the peel and mash with a fork. Season with salt, pepper and lemon juice.

Prepare tuna cream

Drain 2 cans of tuna and mix in a bowl with 2 tbsp mayonnaise. Season with lemon juice.

Layer salad

Divide rice into 4 screw-top jars. First layer tuna cream, then avocado on top. Spread mango-cucumber salad on top. Serve with soy sauce.
