Description

This hearty seafood rice is an absolute highlight for all lovers of Mediterranean cuisine! I especially like to make it when I get fresh seafood, but it also works wonderfully with frozen food. The rice perfectly absorbs the aromas of the seafood, vegetables and white wine and becomes nice and creamy. A dash of lemon juice and fresh coriander round off the dish. Perfect as a main course for a cozy dinner or as a festive dish for special occasions. Preparation in the Thermomix® is super easy and saves time!

Ingredients (18 ingredients)

  • Shrimps
  • 500 g Frozen Frutti di mare (pre-cooked)
  • 1 piece Onion
  • 3 clove Garlic
  • 2 piece Bell peppers (e.g. green and red)
  • 250 g Tomatoes
  • 4 tbsp Olive oil
  • Salt
  • Pepper
  • 1 piece Bay leaf
  • Sweet paprika
  • 0.1 l Dry white wine
  • 500 g Sieved tomatoes
  • 1 tsp Vegetable broth
  • 250 g Long grain rice
  • 1 tbsp Lemon juice
  • 1 bunch Coriander (or parsley) for garnish
  • 1 piece Organic lemon for garnish

Preparation (8 steps)

Prepare onion, garlic, peppers and tomatoes

Peel the onion and garlic and put them in the mixing bowl. Chop for 3 sec./level 5. Clean, wash and dice the peppers and tomatoes.

Sauté the vegetables

Put 4-5 tbsp olive oil in the mixing bowl and sauté the chopped onion-garlic mixture together with the bay leaf for 3 min./120°C/level 1. Use the spatula to push down from the edge.

Add and simmer peppers and tomatoes

10 min/212°F/Speed 1 100

Add the diced peppers and tomatoes to the mixing bowl and simmer for 10 min./100°C/level 1. Stir in between with the spatula.

Season and add liquid

Thermomix® Setting

Season with salt, pepper and sweet paprika. Add 0.1 l dry white wine, 500 g sieved tomatoes, 250 ml water and 1 tsp vegetable stock to the mixing bowl and bring to the boil for 5 min./100°C/level 1.

Cook the rice

15 min/212°F/Speed 1 Linkslauf 100 Reverse

Add 250 g long-grain rice to the mixing bowl and simmer for 15 min./100°C/level 1 reverse. Stir occasionally with the spatula.

Add seafood

Add 500 g thawed and drained Frutti di Mare to the mixing bowl and simmer for 10 min./100°C/level 1 reverse.

Add shrimp and season

Thermomix® Setting
2 min/212°F/Speed 1 Linkslauf 100 Reverse

Add the fried shrimp (see separate preparation below) to the mixing bowl and heat for 2 min./100°C/level 1 reverse. Season with salt, pepper and 1 tbsp lemon juice.

Prepare shrimp (pan)

Peel the thawed shrimp, leaving the tail fins on, and remove the intestinal tract. Wash the shrimp and pat dry. Heat 2 tbsp oil in a pan and fry the shrimp in it for 2-3 minutes. Season with salt and pepper and remove. Set aside.
