Description

This eggplant gratin with tomato and parmesan is a comforting and flavorful dish, perfect for a sunny lunch or a convivial dinner. I have been preparing this recipe for years and it is always a hit at home. The eggplants, melting and slightly grilled, go wonderfully with the homemade tomato sauce and the browned parmesan. A real delight! The preparation is a bit long, but the result is really worth it. Do not hesitate to use seasonal eggplants for an even more pronounced taste. This dish is ideal for vegetarians and can be served with a green salad for a complete meal.

Ingredients (5 ingredients)

  • 3 piece Eggplant
  • 1 piece Onion
  • 1 Bouteille Tomato coulis
  • 5 slice Stale bread
  • 200 g Grated parmesan

Preparation of eggplants

Peel and cut the eggplants into slices about 5 mm thick. Place the slices in a colander and sprinkle with salt. Let drain for an hour to remove the bitterness.

Preparation of the tomato sauce

Cut the onion in half and put it in the Thermomix bowl. Chop for 3 Sek./Stufe 5.

Cooking of the tomato sauce

Add the tomato coulis to the Thermomix bowl. Season with salt and pepper. Cook for 30 Min./100°C/Stufe 2.

Preparation of parmesan breadcrumbs

10 sec/Speed 8

Cut the stale bread into pieces and put them in the Thermomix bowl. Mix for 10 Sek./Stufe 8 to obtain a fine breadcrumb.

Breadcrumbs and parmesan mixture

Pour the breadcrumbs into a bowl and mix with the grated parmesan.

Cooking of eggplants

Fry the eggplant slices in a pan with oil until golden brown. Then place them on absorbent paper to remove excess oil.

Assembling the gratin

Preheat the oven to 180°C. In a gratin dish, alternate layers of fried eggplants, tomato sauce and breadcrumb-parmesan mixture. Finish with a layer of breadcrumb-parmesan.

Gratin in the oven

Bake the dish for 20 minutes, or until the gratin is golden brown and bubbly.
