Description

This cauliflower tabouleh is a refreshing and healthy salad, ideal as a low-carb side dish or a light main course. It only takes 20 minutes to prepare and is designed for 4 servings. The salad is rich in vegetables and herbs, making it ideal for a balanced diet. Perfect for summer or as a light meal after a workout.

Ingredients (11 ingredients)

  • 400 g Cauliflower florets
  • 30 g Flat-leaf parsley
  • 15 g Mint
  • 100 g Spring onions
  • 50 g Celery stalks
  • 4 EL Lemon juice
  • 2 EL Olive oil
  • 1 TL Sesame paste (tahini)
  • Salt
  • Pepper
  • 1 EL Sesame seeds

Preparation (9 steps)

Chop the cauliflower

Thermomix® Setting

Place 400 g cauliflower florets in the mixing bowl and chop for 5 sec/speed 5. If necessary, push down with the spatula and repeat the process until the desired consistency is reached.

Transfer the cauliflower

Transfer the chopped cauliflower from the mixing bowl to a bowl and set aside.

Chop the parsley and mint

Thermomix® Setting
3 sec/Speed 7

Place 30 g flat-leaf parsley and 15 g mint in the mixing bowl and chop for 3 sec/speed 7. If necessary, push down with the spatula and repeat the process.

Transfer the herbs

Add the chopped herbs from the mixing bowl to the cauliflower in the bowl.

Chop the spring onions and celery

Thermomix® Setting

Place 100 g spring onions (in pieces) and 50 g celery stalks (in pieces) in the mixing bowl and chop for 3 sec/speed 5. If necessary, push down with the spatula and repeat the process.

Transfer the vegetables

Add the chopped spring onions and celery from the mixing bowl to the cauliflower and herbs in the bowl.

Prepare the dressing

Thermomix® Setting
10 sec/Speed 3

Place 4 tbsp lemon juice, 2 tbsp olive oil, 1 tsp sesame paste (tahini), salt and pepper to taste in the mixing bowl and mix for 10 sec/speed 3.

Mix the dressing

Pour the dressing from the mixing bowl over the cauliflower tabouleh in the bowl and mix everything well.

Season and serve

Sprinkle the cauliflower tabouleh with 1 tbsp sesame seeds and serve.
