Description

These vegetarian lentil curry tacos are a delicious and nutritious option to enjoy legumes in a different way. The combination of red lentils with curry and fresh vegetables creates a dish full of flavor and textures. Perfect for a quick weekday meal or an informal brunch with friends. I prepare them often because they are very easy to make and always succeed. In addition, they can be adapted to everyone's tastes, adding or removing ingredients. Go ahead and try them, you will love them! They are an excellent vegetarian alternative and an original way to eat legumes.

Ingredients (17 ingredients)

  • 100 g Red lentils
  • 30 ml Extra virgin olive oil
  • 1 piece Medium spring onion
  • 1 cucharadita Ground curry
  • 0.25 cucharadita Sweet paprika
  • 0.25 cucharadita Granulated garlic
  • 1 pinch Ground black pepper
  • 1 piece Lettuce heart
  • 2 piece Tomato
  • 1 piece Carrot
  • 1 piece Small red pepper
  • 1 pinch Goat cheese
  • 1 pinch Fresh parsley
  • 1 pinch Cilantro
  • 1 pinch Wheat tortillas
  • 1 pinch Salt
  • 1 piece Lime

Preparation (7 steps)

Chopped onion

Put the medium spring onion in the glass and chop for 3 seconds at speed 5.

Sauté the onion

Add 30 ml of extra virgin olive oil to the glass and sauté for 3 minutes at 120°C at speed 1.

Add the lentils and spices

Add 100 g of red lentils (previously rinsed), salt, ground black pepper to taste, 1 teaspoon of ground curry, 1/4 teaspoon of sweet or spicy paprika and 1/4 teaspoon of granulated garlic to the glass. Stir for 1 minute at 100°C at speed 1.

Cook the lentils

Thermomix® Setting
15 min/212°F/Speed 1 100

Cover the lentils with water (approximately 1 finger above) and cook for 15 minutes at 100°C at speed 1. If necessary, add more water little by little during cooking to prevent them from drying out. The final texture should be tender but dry.

Cool the lentils

Pour the lentils into a container and let cool completely.

Prepare the vegetables

Cut 1 carrot and 1 small red pepper into strips. They can be sautéed in a pan with a little oil or used raw.

Assemble the tacos

Place a base of lentils in the center of each wheat tortilla. Add a few leaves of 1 lettuce heart cut into julienne strips, a few pieces of 2 tomatoes and several strips of pepper and carrot to taste. Add crumbled goat cheese, a few leaves of fresh parsley or cilantro and finish with a touch of juice from 1 lime.
