Description

I love this recipe for tagliatelles with scrambled eggs! It's a simple, quick and so comforting dish. Fresh pasta goes perfectly with the sweetness of scrambled eggs and grated Parmesan cheese adds a touch of indulgence. A little fresh chopped parsley for freshness and that's it! Ideal for a quick lunch or a convivial family dinner. You can easily adjust the amount of Parmesan according to your tastes. A real delight, ready in no time!

Ingredients (7 ingredients)

  • 500 g tagliatelles
  • 8 piece eggs
  • to taste parmesan
  • fresh parsley
  • to taste olive oil
  • to taste fine salt
  • to taste pepper

Cooking the tagliatelles

Thermomix® Setting
10 min/212°F/Speed 1 100

Pour 1.5 liters of water and a pinch of salt into the Thermomix bowl. Program 10 Min./100°C/Stufe 1. Then add 500 g of tagliatelles through the opening and cook according to the time indicated on the packaging, setting the temperature to 100°C and the speed to Stufe 1.

Preparing the scrambled eggs

While the pasta is cooking, crack 8 eggs in a pan. Add a drizzle of olive oil, a pinch of salt and pepper. Cook over low heat, stirring constantly with a spatula until the eggs are set but still creamy. Add half of the fresh chopped parsley.

Assembly and service

Drain the cooked pasta and pour it into a serving dish. Add the scrambled eggs, mix gently. Sprinkle with grated Parmesan cheese and the remaining fresh chopped parsley. Serve immediately.
