Description

This venison tagine with prunes and almonds is a hearty and festive main course, ideal for the winter season. The recipe is designed for 4 servings and is prepared in about an hour. The tagine is prepared in the Thermomix®, which makes the flavors particularly effective. A savory dish for special occasions.

  • 700 g Venison
  • 2 Garlic clove(s)
  • 3 cm Ginger
  • 1 TL Cumin
  • 0.5 TL Peppercorns, white
  • 1 TL Saffron threads
  • 6 EL Olive oil
  • 1 Vegetable onion(s)
  • 2 Carrot(s)
  • 250 g Prune(s)
  • 1 Lemon(s)
  • 1 TL Salt
  • 1 Cinnamon stick(s)
  • 1 Liter Game stock
  • 0.5 Dose Chickpeas
  • 1 Bund Mint
  • 1 Bund Flat-leaf parsley
  • 250 g Almond(s)

Preparation (9 steps)

Chop garlic and ginger

Thermomix® Setting
3 sec/Speed 7

Add 2 garlic cloves and 3 cm fresh ginger to the mixing bowl and chop for 3 sec./speed 7. Scrape down with the spatula.

Add and sauté spices

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 6 tbsp olive oil, 1 tsp cumin, 0.5 tsp white peppercorns and 1 tsp saffron threads to the mixing bowl and sauté for 3 min./120°C/speed 1.

Chop onion and carrots

Thermomix® Setting
5 sec/Speed 5

Add 1 vegetable onion and 2 carrots in coarse pieces to the mixing bowl and chop for 5 sec./speed 5. Scrape down with the spatula.

Sauté vegetables

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the chopped vegetables to the spices in the mixing bowl and sauté for another 3 min./120°C/speed 1.

Sear meat (NOT in the Thermomix!)

Cut 700 g venison into cubes and sear in a separate pan with some olive oil. Then add to the vegetables in the mixing bowl.

Add liquid and spices

Add 1 tsp salt, 1 cinnamon stick, 1 liter game stock, the juice of 1 lemon and 250 g prunes to the mixing bowl.

Simmer tagine

45 min/212°F/Linkslauf Speed 1 100 Reverse

Close the mixing bowl and simmer for 45 min./100°C/reverse blade speed 1.

Add chickpeas and almonds

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add 0.5 can chickpeas (rinsed and drained) and 250 g almonds to the mixing bowl and heat for another 5 min./100°C/reverse blade speed 1.

Add mint and parsley

Thermomix® Setting
10 sec/Linkslauf Speed 1 Reverse

Roughly chop 1 bunch mint and 1 bunch flat-leaf parsley, add to the mixing bowl and stir in for 10 sec./reverse blade speed 1.
