Description
This lemon cheesecake from the Thermomix® is a refreshing treat with shortbread cookies, quark and lemon. Preparation takes about 50 minutes and results in a delicious dessert. Ideal for those looking for a simple and tasty cake. Perfect as a sweet ending to a family meal or for coffee visits.

200 g Shortbread cookies

150 g Butter, melted

500 g Quark

100 ml Oil

1 Stück Lemon, juice of it

1 Päckchen Vanilla pudding

250 ml Milk

150 g Sugar

1 Päckchen Vanilla sugar

1 Päckchen Cake glaze, clear

2 EL Sugar
-
200 ml Water
-
1 Päckchen Lemon sugar
Preparation (6 steps)
Prepare base
Place 200 g shortbread cookies in the mixing bowl and chop for 5 sec/speed 5. Add 150 g melted butter and mix for 10 sec/speed 3. Transfer the mixture to a springform pan and press down firmly.
Prepare cream
Place 500 g quark, 100 ml oil, juice of one lemon, 2 eggs, 1 packet vanilla pudding, 250 ml milk, 150 g sugar and 1 packet vanilla sugar in the mixing bowl and stir for 30 sec/speed 4.
Pour cream onto the base
Pour the cream onto the prepared base in the springform pan.
Prepare cake glaze
Place 1 packet of clear cake glaze, 2 tbsp sugar and 200 ml water in the mixing bowl and stir for 10 sec/speed 4. Then add 1 packet of lemon sugar and stir again for 5 sec/speed 3.
Pour cake glaze on the cake
Spread the cake glaze evenly over the cream.
Bake
Bake the cake in a preheated oven at 180°C for 30 minutes.
