Description

This yogurt and blackberry cake is a true summer pleasure! Its soft texture and delicate yogurt flavor blend perfectly with the sweetness of fresh blackberries. I often prepare it for Sunday breakfast or for a delicious snack with friends. It is very easy to make and the result is always a success. If you want, you can also add a few chocolate chips to the dough for an even more delicious touch. Serve it with a scoop of vanilla ice cream for an unforgettable dessert! Also perfect for an outdoor brunch.

  • 210 g blackberries
  • 125 g plain yogurt
  • 2 uova eggs
  • 180 g sugar
  • 100 g butter
  • 200 g flour
  • 16 g baking powder
  • 60 g starch
  • 20 g sugar
  • 40 g blackberries
  • icing sugar
  • vanilla ice cream

Incorporate the blackberries

Gently add 210 g of blackberries to the dough in the bowl. Mix with the spatula for 10 Sek./Linkslauf Stage 2 to avoid damaging the blackberries.

Pour into the mold

Pour the dough into a well-greased and floured 24 cm mold. Level the surface.

Decorate with blackberries

Distribute 40 g of blackberries on the surface of the cake.

Baking in the oven

Bake in a preheated fan oven at 170° C for about 45 minutes, or in a static oven at 180° C for the same time. (This step is not performed with the Thermomix).

Cooling and serving

Once cooked, remove from the oven and let the cake cool slightly. Sprinkle with icing sugar and serve with vanilla ice cream.

She often prepared simple but delicious cakes, using the fresh fruits from her garden. This recipe is my reinterpretation of one of those cakes, adapted to the use of the Thermomix® for an even faster and simpler preparation. Blackberries, with their sweet and slightly tart taste, are the undisputed stars of this cake. I always use fresh blackberries, possibly in season, because their flavor is incomparable. Plain yogurt gives the cake an incredibly soft texture and a delicate flavor that perfectly complements the sweetness of the blackberries. The butter, melted and added to the dough, helps to make the cake even softer and more fragrant. The flour and cornstarch, combined with the baking powder, guarantee a perfect leavening and a light and airy texture. For preparation with the Thermomix®, it is essential to carefully follow the times and speeds indicated. In particular, when adding the blackberries to the dough, it is important to use the "Linkslauf" (reverse) function at low speed to avoid breaking them and dispersing their juice in the dough. Another tip is to grease and flour the mold carefully to prevent the cake from sticking. This cake is very versatile and lends itself to different variations. For a vegetarian version, you can replace the butter with sunflower seed oil or coconut oil. For a vegan version, you can use vegetable yogurt and replace the eggs with a mixture based on ground flax seeds and water. You can also add spices such as cinnamon or vanilla to flavor the dough. The soft cake of yogurt and blackberries is perfect for breakfast, snacks or as a light dessert after dinner. It can be served plain, sprinkled with icing sugar, or accompanied by a scoop of vanilla ice cream or a berry sauce. Another idea is to cut it into cubes and serve it with custard or zabaglione.
