Description

This hearty onion cake is an absolute classic and tastes simply delicious! I especially like to make it in autumn when the onions are fresh from the field. The dough is nice and fluffy, and the topping of onions, bacon and a creamy custard is simply irresistible. It's always a hit with me, whether for brunch, as a snack or as a main course. It can also be prepared well in advance and tastes good both warm and cold. A great recipe for anyone who likes it hearty!

Ingredients (16 ingredients)

  • 250 g Flour
  • 1 tsp Sugar
  • 0.5 tsp Salt
  • 175 ml Milk
  • 15 g Yeast
  • 25 g soft Butter
  • 1000 g Onions
  • 250 g smoked, streaky Bacon
  • 2 tbsp Oil
  • 125 g Sour cream
  • 100 g Cream
  • 3 piece Eggs (Gr. M)
  • to taste Pepper
  • to taste grated Nutmeg
  • 2 tbsp Breadcrumbs
  • to taste Flour for work surface and hands

Prepare dough

Thermomix® Setting
2 min/99°F/Speed 2 37

Put flour, sugar and salt into the mixing bowl and mix for 10 sec./level 3. Add milk and yeast to the mixing bowl and heat for 2 min./37°C/level 2. Add butter and knead for 2 min./kneading level to a smooth dough. Transfer the dough to a bowl and let it rise covered in a warm place for about 40 minutes.

Prepare onions

Thermomix® Setting
5 sec/Speed 5

Peel the onions, halve and put in the mixing bowl. Chop for 5 sec./level 5. Cut the bacon into cubes.

Sauté onions

Thermomix® Setting
15 min/248°F/Speed 1 120

Add oil and bacon cubes to the mixing bowl and sauté for 3 min./120°C/level 1. Add onions and sauté for 15 min./120°C/level 1. Then transfer to a bowl and let cool.

Roll out and shape dough

Knead the dough well on a floured work surface with floured hands. Roll out on a floured work surface to form a circle (approx. 32 cm Ø). Grease a springform pan (26 cm Ø) and dust with flour. Place dough inside, pressing the edge lightly. Let rise again in a warm place for about 30 minutes.

Prepare custard

Put sour cream, cream and eggs into the mixing bowl. Season with salt, pepper and nutmeg and stir for 20 sec./level 3.

Top and bake onion cake

Sprinkle the bottom with breadcrumbs. Spread onions on top and pour the egg custard over it. Bake in a preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) on the lower rack for 50–60 minutes. Remove from the oven, let rest on a wire rack for about 10 minutes. Remove from the springform, cut into pieces and arrange.

About this recipe

For me, hearty onion cake is more than just a recipe; it is a memory of my childhood. My grandma, a true Rhinelander, always baked it, especially for the onion harvest in late summer. The scent that wafted through the house at that time was incomparable. I often helped her cut onions (with tears in my eyes, of course!) and was allowed to taste the custard at the end. This recipe is my homage to her and her culinary skills. The ingredients are deliberately kept simple, but each one plays an important role. The flour forms the basis for the dough, which becomes nice and loose and airy thanks to the yeast. The milk provides the necessary moisture and the butter a delicate flavor. The onions, preferably a variety with a slightly sweet aroma, are of course the star of the cake. The smoked bacon brings a hearty, salty note and a pleasant texture into play. Sour cream and cream, together with the eggs, form a creamy custard that holds everything together and gives the cake its juiciness. Nutmeg and pepper round off the taste. When preparing in the Thermomix®, it is important not to let the yeast get too hot, otherwise it will lose its rising power. The 37°C is ideal. When sautéing the onions and bacon, the temperature of 120°C is perfect to cook the onions soft and aromatic without burning them. Make sure to let the onions cool well after sautéing before putting them on the dough so that it does not soak through. The breadcrumbs on the bottom also prevent the dough from becoming too moist. If you want to prepare the onion cake vegetarian, you can simply leave out the bacon or replace it with smoked tofu. For a vegan version, you can prepare the dough with plant-based milk and vegan butter and replace the custard with a mixture of cashew butter, plant-based milk and nutritional yeast. Feel free to experiment with other spices such as caraway, marjoram or thyme. The onion cake tastes best lukewarm, straight from the oven. But it is also a pleasure cold and is ideal as a snack on the go or as part of a buffet. It goes well with a fresh salad with a light vinegar-oil dressing or a glass of Federweißer. The onion cake can be prepared well in advance. The dough can be prepared the day before and stored in the refrigerator. You can also sauté the onions the day before. The finished onion cake can be kept in the refrigerator for 2-3 days. It can also be frozen without any problems.
