Description

This Thermomix® recipe for top sirloin roast with creamy mushroom sauce and summer vegetables is a hearty main course with potatoes, fresh and dried porcini mushrooms.   • 1500 g small, firm-cooking potatoes
  • Salt
  • 70 g medium-hot mustard
  • 30 g dried porcini mushrooms
  • 500 g fresh porcini mushrooms
  • 5 piece Onions
  • 3 Stiele Lovage
  • 9 tbsp Clarified butter
  • 2 piece Top sirloin roasts (à 700-800 g)
  • Pepper
  • 1650 g Savoy cabbage
  • 500 g Young carrots
  • 6 tbsp Butter
  • Nutmeg
  • 6 tbsp Breadcrumbs
  • 2 tbsp Flour

Preparation (6 steps)

Prepare potatoes

Thermomix® Setting

The day before, peel and wash the potatoes and put them in the mixing bowl. Cover with salted water and cook for 20 min./100°C/speed 1. Then drain and mix with mustard in a bowl. Allow to cool and leave to infuse in the refrigerator overnight, covered.

Soak and prepare porcini mushrooms

The next day, soak the dried porcini mushrooms in approx. 1.5 l of lukewarm water for 2 hours. Clean the fresh porcini mushrooms and slice them. Peel and dice 4 onions. Wash the lovage, tie the stems together. Drain the soaked mushrooms and collect the mushroom water. Place the soaked mushrooms in the mixing bowl and chop for 5 sec./speed 5.

Prepare roast (NOT in Thermomix!)

Heat 2 tbsp clarified butter in a large roasting pan. Sear the meat vigorously in it, possibly in batches, season with salt and pepper, and remove. Heat 2 tbsp clarified butter in the roasting fat. Sauté the onions, fresh and soaked porcini mushrooms in it. Season with salt and pepper. Add mushroom water, lovage and meat. Bring to the boil and simmer covered in the preheated oven (electric oven: 140°C/fan oven: 120°C/gas: see manufacturer's instructions) for approx. 3 hours.

Prepare vegetables

Wash the cabbage, quarter it first, then cut it into strips from the stalk. Peel, wash and dice the carrots. Peel and dice 1 onion. Place 4 tbsp butter in the mixing bowl and melt for 3 min./120°C/speed 1. Add onion, carrots and cabbage and chop for 5 sec./speed 4. Season with salt. Pour in 350 ml water and cook for 20 min./100°C/speed 1. Season with salt, pepper and nutmeg.

Prepare fried potatoes (NOT in Thermomix!)

Mix the potatoes with breadcrumbs. Heat 5 tbsp clarified butter in a pan. Fry the potatoes in it until golden brown.

Prepare sauce

5 min/212°F/Speed 2 212°F

Knead flour and 2 tbsp butter together. Remove meat and lovage from the roasting pan. Pour the roasting juices into the mixing bowl. Add flour butter and stir for 5 min./100°C/speed 2 to thicken the sauce.
