Description

This tart with carrot greens and Comté is an original and tasty way to use carrot greens, often thrown away. It is an economical and vegetarian dish, perfect for a light lunch or a spring brunch. The shortcrust pastry, prepared with semi-wholemeal flour, brings a rustic texture and a slightly nutty taste that goes perfectly with the sweetness of the carrot greens and the character of the Comté. I often prepare it when I have fresh carrot greens from the market, and it always has its little effect. Feel free to vary the cheeses according to your tastes!

Ingredients (12 ingredients)

  • 2 bunch uncooked greens
  • 1 piece onion
  • 3 piece eggs
  • 20 cl soy cream
  • 50 g freshly grated Comté
  • to taste salt
  • to taste pepper
  • 250 g semi-wholemeal flour
  • 4 càS olive oil
  • 0.5 càc baking powder
  • lukewarm water
  • to taste salt

Preparation (10 steps)

Preparation of the dough

Thermomix® Setting
10 sec/Speed 4

Put 250g of semi-wholemeal flour, 1/2 tsp of baking powder and salt in the Thermomix bowl. Mix 10 Sec./Stufe 4.

Adding the oil and water

2 min/Kneading speed

Add 4 tbsp of olive oil and lukewarm water little by little into the Thermomix bowl, mixing 2 Min./Knetstufe, until a homogeneous ball of dough is obtained.

Preparation of the mold and the dough

Butter a tart pan before spreading the dough in it. Prick it with a fork. Set aside.

Preheating the oven

Preheat the oven to 200°C (th7).

Preparation of carrot greens and onion

Thermomix® Setting
10 min/Varoma/Speed 1 Varoma

Wash the 2 bunches of carrot greens. Cut the stems that are too thick. Cut 1 onion in half and put it in the Thermomix bowl. Chop 3 Sek./Stufe 5. Add the cut carrot greens into the Varoma. Fill the Thermomix bowl with 500 ml of water. Steam 10 Min./Varoma/Stufe 1.

Draining the vegetables

Put the carrot greens and onion to drain.

Preparation of the quiche mixture

Thermomix® Setting
20 sec/Speed 3

Break 3 eggs in the Thermomix bowl. Add 20cl of soy cream, salt and pepper. Mix 20 Sek./Stufe 3.

Mixing the vegetables and the quiche mixture

10 sec/Linkslauf Speed 2 Reverse

Add the drained carrot greens and onion in the Thermomix bowl. Mix 10 Sek./Linkslauf Stufe 2.

Adding the Comté

Thermomix® Setting
5 sec/Linkslauf Speed 2 Reverse

Add half (25g) of the freshly grated Comté in the Thermomix bowl. Mix 5 Sek./Linkslauf Stufe 2.

Assembly and baking of the quiche

Pour the preparation onto the tart base. Sprinkle with the rest (25g) of grated Comté. Bake in the oven for 25 minutes.
