Description

This soft eggless cake is a great alternative for those looking for a light and easy to prepare dessert. Its soft texture and delicate vanilla aroma make it perfect for breakfast, a snack, or as a light dessert after dinner. I often prepare it when I have guests with intolerances or simply want a lighter dessert. The recipe is really simple and quick, also ideal for those who don't have much experience in the kitchen. Try it, it will win you over! You can decorate it with powdered sugar or fresh fruit for an extra touch.

Ingredients (7 ingredients)

  • 120 ml Lukewarm water
  • 250 g 00 Flour
  • 150 g Sugar
  • 80 ml Sunflower seed oil
  • 1 packet Instant yeast for cakes
  • 1 tsp Vanilla extract
  • Powdered sugar

Preparation (9 steps)

Sift flour and yeast

In a bowl, sift 250g of 00 flour and 1 sachet of instant yeast for cakes. This step is important to avoid lumps in the batter.

Dissolve the sugar in the water

Pour 120 ml of lukewarm water and 150g of sugar into the Thermomix bowl. Mix for 20 Sec./Speed 3 to completely dissolve the sugar.

Add vanilla and oil

Add 1 teaspoon of vanilla extract and 80 ml of sunflower seed oil to the bowl. Mix for 10 Sec./Speed 3 to blend the ingredients.

Incorporate the flour

30 Sec./Speed 4

Gradually add the sifted flour with the yeast into the bowl. Mix for 30 Sec./Speed 4, using the spatula to help all the ingredients blend well.

Blend the batter

Thermomix® Setting
20 Sec./Speed 4

Continue mixing for another 20 Sec./Speed 4, until you get a smooth, homogeneous and lump-free mixture. If necessary, scrape the sides of the bowl with the spatula.

Prepare the cake tin

Grease and flour a 22 cm diameter cake tin.

Pour the batter into the cake tin

Pour the mixture inside the prepared cake tin.

Bake in the oven

Bake in a preheated static oven at 180°C for 45 minutes. Do the toothpick test to check for doneness.

Cool and decorate

Once cooked, let the cake cool completely before transferring it to a serving dish and sprinkling with powdered sugar.
