Description

This soft plum cake is a true comfort food, perfect for breakfast or a snack. Its preparation is incredibly simple and quick thanks to our trusted Thermomix®. The plums, with their sweet and slightly tart taste, go perfectly with the softness of the dough. A touch of grated lemon zest adds a fresh and fragrant note. I often prepare it in the autumn, when the plums are at their best, but it is delicious at any time of the year. Try it, you won't regret it! You can decorate it with flaked almonds for a crunchy touch.

  • 150 g sugar
  • 100 ml milk
  • 100 ml seed oil
  • 250 g 00 flour
  • 8 g baking powder
  • 200 g plums
  • 1 piece lemons _the grated zest_

Preparation of the liquid ingredients

Insert the eggs, sugar, seed oil and milk into the bowl. Mix for 20 Sec./Speed 4 until you obtain a smooth and homogeneous mixture.

Adding the dry ingredients

Add the flour and baking powder into the bowl. Mix for 20 Sek./Speed 4 to eliminate any lumps. Use the spatula to collect the mixture from the walls of the bowl.

Incorporating the plums and lemon zest

Add the chopped plums and grated lemon zest into the bowl. Mix for 10 Sek./Linkslauf Speed 3 to gently blend everything together.

Pouring the dough into the mold

Pour the dough into a 25 x 12 cm loaf pan, buttered and floured. If necessary, level with the back of a spoon or a spatula and then decorate the surface with slices of plums.

Decoration and baking

Add the flaked almonds on the surface of the cake. Bake in a preheated ventilated oven at 170°C for 45 minutes, then do the toothpick test at the end.

Cooling and serving

Let the cake cool slightly, remove it from the mold and bring it to the table!

The soft plum cake is a classic from my childhood, a memory linked to the scents of my grandmother's kitchen, especially during the autumn season. She always prepared it with plums from her tree, a generous tree that gave us juicy and fragrant fruits. This version, made with the Thermomix®, is a tribute to that tradition, simplified but just as rich in flavor. The plums are the real stars of this cake. Their sweetness, balanced by a slight acidity, goes perfectly with the softness of the dough. I preferably use plums, those with yellow and firm pulp, because they maintain their shape better during cooking and release a delicious juice. The grated lemon zest adds a note of freshness that contrasts the sweetness of the plums, making the flavor more complex and inviting. The 00 flour, light and delicate, helps to create a soft and airy cake, while the seed oil, neutral in flavor, allows you to best enhance the other ingredients. For an optimal result, it is important that the eggs are at room temperature. This promotes emulsification with the sugar and oil, creating a more homogeneous and light dough. When adding the chopped plums, it is essential to use the "Linkslauf" (reverse rotation) function of the Thermomix® to avoid excessively blending them. The goal is to incorporate them gently into the dough, keeping their pieces intact. If you don't have flaked almonds, you can also use coarsely chopped walnuts or simply sprinkle the surface with a little icing sugar after cooking. For a vegetarian version, make sure that the sugar used is vegan (some refined sugars are treated with animal charcoal). For a vegan version, you can replace the eggs with 80g of applesauce or mashed banana, and the cow's milk with soy or almond milk. A pinch of cinnamon or nutmeg in the dough can add a spicy and enveloping touch, especially during the colder months. The soft plum cake is perfect to enjoy for breakfast, accompanied by a cup of coffee or tea, or for a snack, with a glass of fresh milk. It also goes well with a scoop of vanilla ice cream or a spoonful of whipped cream. It can be stored at room temperature, under a glass dome or in an airtight container, for 2-3 days. It can also be prepared the day before and slightly heated before serving. If you want, you can freeze it already cut into slices, to always have it available.
