Description

This oven-baked tortellini casserole is an absolute hit when you need something quick and really delicious! The base is a super aromatic tomato sauce, which is prepared in no time at all in the Thermomix® - with onions, garlic, olive oil, strained tomatoes, tomato paste and of course the obligatory herbs such as oregano and basil. The whole thing is seasoned with salt and pepper to create a really nice and spicy sauce. Then come the tortellini, whether fresh or dried, both work great. And the best part: Everything is topped with creamy mozzarella, which melts wonderfully in the oven. The combination of the fruity tomato sauce, the filled tortellini and the melted cheese is simply unbeatable. A perfect dish for the whole family, for students or simply for everyone who loves comfort food!

Ingredients (11 ingredients)

  • 1 piece Onion
  • 1 clove Garlic
  • 2 tbsp Olive oil
  • 500 g Strained tomatoes
  • 1 tbsp Tomato paste
  • 1 tsp Oregano
  • 1 tsp Basil
  • 1 pinch Salt
  • 1 pinch Pepper
  • 500 g Tortellini (fresh or dried)
  • 125 g Mozzarella

Preparation (6 steps)

Chop onion and garlic

Put onion in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula. Add garlic and chop for 3 sec./speed 7. Push down with the spatula.

Sauté onion and garlic

Add olive oil and sauté for 3 min./120°C/speed 1.

Prepare tomato sauce

Add strained tomatoes, tomato paste, oregano, basil, salt and pepper and cook for 10 min./100°C/speed 1. Leave the measuring cup on.

Mix tortellini and sauce

Put tortellini in a casserole dish and pour the tomato sauce over it. Mix well.

Cover with mozzarella and bake

Cut mozzarella into slices and spread on the tortellini. Bake in a preheated oven at 200°C top/bottom heat for about 20 minutes until the mozzarella is melted and lightly browned.

This oven-baked tortellini casserole is a real favorite in our house. I still remember well how my grandma, a true Italian, used to prepare similar dishes, just without a Thermomix®. She spent hours at the stove simmering the perfect tomato sauce. With the Thermomix® this is of course much faster, but the basic idea remains the same: simple, honest ingredients that together make an incredibly delicious dish. The base of this casserole is of course the tomato sauce. The onion provides a pleasant sweetness and spice, the garlic brings a certain sharpness and depth to the taste. The olive oil not only serves as a flavor carrier, but also ensures that the onion and garlic do not burn. The strained tomatoes form the basis of the sauce and give it its fruity note. The tomato paste intensifies the tomato flavor and ensures a smoother consistency. Oregano and basil are the classic herbs of Italian cuisine and give the sauce its typical Mediterranean flavor. Salt and pepper are of course essential to round off the flavors. With the Thermomix®, it is important not to chop the onion and garlic too finely, as they could burn when sautéing. The temperature of 120°C is ideal for developing the flavors without burning anything. When cooking the tomato sauce, the measuring cup should be left on to avoid splashes. The sauce can of course also be cooked for longer than 10 minutes to intensify the flavor. For a vegetarian version, you can simply use tortellini with a vegetable filling. If you like it vegan, you can use vegan tortellini and mozzarella. Instead of oregano and basil, you can also use other herbs such as thyme, rosemary or marjoram. For a spicier version, you can add some chili or peperoncino. Serve the oven-baked tortellini casserole best straight from the oven, when the mozzarella is still nicely melted. A fresh salad with a light vinegar-oil dressing goes well with it. A piece of crusty bread is also a great addition. Leftovers of the casserole can be stored in the refrigerator and warmed up the next day. The casserole can also be prepared well in advance. You can put the tomato sauce and the tortellini in the casserole dish the day before and cover with mozzarella. The next day, all you have to do is put the casserole in the oven.
