Description

This Spanish omelette with courgette and onion is a delicious and healthy version of the classic dish. The onion is slowly caramelized in the Thermomix®, providing a sweetness that contrasts wonderfully with the tender courgette. It is perfect for a light lunch, a quick dinner or as part of a tapas. The recipe is very simple and is prepared in a short time, ideal for those days when you don't want to complicate things in the kitchen. It is also an excellent way to incorporate vegetables into your diet in a tasty way. Go ahead and try it, you'll love it! You can serve it hot or cold, accompanied by a fresh salad.

Ingredients (5 ingredients)

  • 2 piece Small courgettes
  • 2 piece Medium onions
  • 8 piece Eggs
  • 1 pinch Salt
  • 1 chorro Extra virgin olive oil

Chop the onion

Thermomix® Setting

Peel and cut the medium onions into quarters. Place in the bowl and chop 3 Sec./Speed 5. Lower the remains from the walls of the bowl with the spatula.

Sauté the onion

Thermomix® Setting
8 min/248°F/Speed 1 120

Add a splash of extra virgin olive oil and a pinch of salt to the chopped onion in the bowl. Sauté 8 Min./120°C/Speed 1.

Prepare the courgette

While the onion is sautéing, wash and cut the small courgettes (or one large one) into small cubes.

Add the courgette and sauté

Thermomix® Setting

Add the diced courgette to the bowl with the sautéed onion. Sauté everything together 10 Min./120°C/Speed 1. Salt lightly.

Drain the excess oil

Pour the sautéed vegetables into a colander to remove the excess oil. Reserve the oil to cook the omelette.

Beat the eggs and mix with the vegetables

In a bowl, beat 4 eggs with a pinch of salt. Add half of the sautéed courgette and onion. Mix well.

Cook the omelette

Heat a non-stick frying pan with a little of the oil reserved from the sauté over low heat. Pour the egg and vegetable mixture into the pan. Cook over low heat until the bottom is set.

Turn the omelette over

With the help of a flat plate, carefully turn the omelette over. Return the omelette to the pan and cook until golden brown on the other side.

Serve

Remove the omelette from the pan and serve hot or cold. Repeat steps 6-8 with the remaining ingredients to make the second omelette.
